Edelweiss was recommended to me by my cater. "It's the best cake you'll ever eat," he said, "and it's a total steal."

He was right. For $350 (with delivery), I fed 100 people with the most delicious cake I've ever eaten. It was moist but not too moist, and the flavor was excellent. In full disclosure, I wasn't super concerned about the exact way the cake looked, but it was incredibly beautiful.

I would highly recommend Edelweiss, if only so you can go taste all the cakes!!

We have ordered from Edelweiss before for small personal treats and for my brother-in-laws wedding cake several years back (fresh fruit cake). After cake tasting at several different European bakeries we decided on Edelweiss, as their samples were yummy and pricing was competitive. The cake tastings were great and we went with their mango mousse flavor as the lady there suggested that would stand the test as far as a fruit filled cake that would not go soggy on our guests when it was time to eat. Prior to our wedding we decided to order a birthday cake for our mom as a surprise to our family as a way to show great our wedding cake would taste. Sadly, the birthday cake we ordered was not to our liking as it was too sweet. The owner himself, Jerry was great and talked with me about why the flavor might have been off -a ordering snafu on my behalf as I was informed I ordered the wrong icing. He offered another birthday cake for free. The 2nd cake definitely tasted more like the Edelweiss baked goods we have come to love and appreciate. Well our wedding cake was delicious and beautiful! I can’t thank you enough Edelweiss! Your cakes are yummy and our customer service is excellent. We look forward to having future cakes made by you.

What a great experience! We were looking for a small town bakery that would make us a small cake. We came across this bakery and went in for a cake tasting. The cake was delicious and they worked with us to get the size and price we wanted. We were very happy with our cake!

Edelweiss was amazing. We had two incredibly cute mini wedding cakes, 1 grooms, 1 for cutting. The grooms cake was Lemon Lilly flavored (lemon cake, lemon curd & raspberry preserve filling, butter cream fosting. IT WAS AMAZING. The second (my cake :) was Kahlua chococalte mouse, chocalate cake with butter cream frosting. SO GOOD. The qualoty of ingredients, and the flavor of these cakes was so incredible. We received so many compliments. Please consider this super cute bakery in downtown Prior Lake for your sweets and treats!!!

I am an out of state bride planning my wedding in Minnesota. I arranged several weeks ahead of time to have a cake tasting with the owner of Edelweiss, Mark. My fiance and I had just a few days to pack in as much wedding planning as possible during our brief trip to MN. We made sure to inform Mark in regards to the sensitivity of our time. My mother and I both called twice the week before to confirm that our Wed, 9a.m. meeting with Mark was set in stone and we also discussed that the cake options we would like to taste would be provided. So Wed. morning at 9am, my fiance, mother and I showed up at Edelweiss for our cake tasting. The young girl behind the counter had a blank expression appear across her face, when we told her we were here for our cake tasting with Mark. She informed us that Mark was not here and she wasn't sure when he would be in!!! I explained that we had called 3 times in total to set up this time with him and that we were here for a extremely limited amount of time and rescheduling would be close to impossible. We in turn bent over backwards to meet with him later that day by rescheduling 2 meetings wedding vendors and agreed to come back at 3p.m. the same day! When we came back a different young girl was working. Once again we received the same blank expression from her as we had from the other girl that morning, when we told her that we were here for our 3p.m. cake tasting with Mark!!! He had ditched our appt. yet again! We were all very upset with Edelweiss Bakery's lack of respect for our time, Mark's lack of communication with his employees and blatant disregard for maintaining any degree of professionalism. The young girl got Mark on the telephone, the first thing he said to me was, "Some people have lives you know" I told him that we would be going elsewhere and that his lack of common courtesy and professionalism was astounding. He was very pompous and kept making excuses! What a wedding nightmare, i would not recommend getting your cake or any important order from someone who puts himself first and his future brides/ grooms dead last. What a jerk!

While planning my wedding, my aunt suggested that we use a bakery that she goes to quite often, Edelweiss in Prior Lake. Given that she had recently just planned two weddings for her daughters, I took her advice.

When we went to sample the cakes, the owner, (I can't remember his name,) was very professional and discussed everything about the cakes with us. I brought a picture of what I would like and he said he could easily do it. I also made to other stipulations, the actual cake must be chocolate and the cake must be frosted with butter cream frosting and not top with whipped topping. He took down my order and took the picture I brought. He told us to pay him about a month before the wedding.

When we came back to pay, about one month later, a very unprofessional teen girl sat us down and started sampling us cake again in a way that only someone who doesn't care about you, your wedding or your cake could... very snippy. When we tried to tell her that we were not there for another cake tasting, she told us that she was told to sample us the cake. Then she stormed off. We were horrified and asked another employee to speak to the owner. He came out reassured us and told us he didn't have our order any longer and that he had to go finish up some work. The same teen girl came out to take our order... again.

I remembered everything that I wanted, my aunt also wrote everything down from the first time we ordered and we reordered. She read the order back but I still felt slightly uneasy. Our money was taken and we left. We didn't have the time to find a new baker, so it looked like we were stuck.

One month later and our wedding had gone perfectly. When we arrived at the reception I couldn't wait to see my cake, after all, the picture I had given the baker was from the Martha Wedding mag. The cake looked amazing, perfect. I had never seen butter cream frosting look so luminous. It was pretty strange but absolutely lovely. It wasn't until the cake cutting that I found that the actual cake was vanilla, a horrible blow to a chocolate lover. Then like a cruel trick, I noticed that the beautiful gleam on the cake was not brought on by some kind of baking voodoo magic that I had never heard of, but by whipped topping, the awful fad that leaves a bad taste in mouth, both figuratively and literally.

I am fortunate enough to say that this was the worst thing that happened on my wedding day, but since I was little girl, I always wanted chocolate cake. My advice to anyone who is considering Edelweiss is call every week, better yet, everyday up until your wedding to make sure that you get what you really want and my advice to the owner, get better employees, this is your livelihood, my friend.

My experience with this vendor was anything but pleasent. I felt rushed through my selection of the cake and it's design. Nervous about this I did have a small amount of faith as at least I knew the cake was going to taste good. The day of the wedding my cake was to be delivered to the hall and set up... My wedding was held at a ballroom with a physical address, after giving the cake maker the address and contact info he said if he had any questions he would look the location up on line... fine with me.... But the cake was delivered to the wrong wedding... The wedding he delivered the cake to was a park wedding that was outside at a city park about 2 miles befor you reached my venue. Being no cake my soon to be mother in law was a bit conserned and started to seek out the solution to the problem. She found out the cake was at the park down the street, so she along with some of my uncles went down to pick up my cake.... they walked it back and set it up... thanks to my family!!! The monday after the wedding I recieved a phone call at 6am in the morning from the cake maker. He was laughing and said he heard he delivered the cake to the wrong wedding.... Ha ha not funny. He offered me a lunch certifcate to his diner for $6.00 as an apoligy and then asked if I would like an cards to pass onto my friends who would be getting married. I said no thanks to the cards (not even for my worst enemy) and to the lunch.

One year later, as in our contract he was to make a matching cake top for my husband and I to share on our anniversary. I called to arrange pick-up of our cake top and he told me he had to record of ever doing my wedding. After trying to show him pictures of our cake... still no recoltion so I took a small off the shelf cake to "enjoy"

We were so pleased with everything about this bakery from the variety of options at the tasting to having our cake match our invites to the free small version of our cake on our 1 year anniversary.
I have recommended this bakery to so many people. The guests at our wedding still talk about our cake, it was that good.
