I really wish I had seen Ivy & Aster’s wedding dresses before I got married. I can’t say enough about how perfect these gowns are in every way - romantic, modern, unique, sweet and affordable. Do you love the look of macarons, but want to avoid the complicated recipe? Try this easy alternative: mini whoopie pies!
A photo of a colorful sleeve of French macarons is on almost every bride’s wedding inspiration board, and with good reason - these treats are some of the prettiest things going. But for the DIY bride, tackling the recipe can be a bit tricky - even for more experienced bakers.
Enter the humble whoopie pie. These homey, cakey rounds have been a kid-friendly staple in the kitchens of busy moms for years now; but by making them a bit smaller and reducing the pillow of fluffy filling to a more dainty smear, their sophistication quotient goes way up, making them perfect for weddings. Whoopie pies are super easy and fast to make and bake, and with just a few drops of food coloring, the dough (and even the filling) can be tinted to whatever color your heart desires - mimicking the look of macarons without the fuss and stress.
To make about 30 mini whoopie pies, you’ll need:
1 egg
1/3 cup vegetable oil
1 cup sugar
2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
3/4 cup milk
1 teaspoon vanilla
Food coloring in your choice of color
Preheat your oven to 350 F. In a large bowl with a mixer at medium speed, beat egg and vegetable oil. Gradually beat in sugar and continue beating until the mixture is pale yellow in color. Add food coloring to create your desired sandwich color. In another bowl, combine flour, baking soda and salt. In a measuring cup combine milk and vanilla. Add the flour and milk mixtures alternately to the egg and sugar mixture, beginning and ending with the dry ingredients. Drop the dough by teaspoons onto a cookie sheet covered with parchment paper, leaving about 2 inches between drops. Bake about 5 minutes or until the tops spring back when lightly touched with finger. Remove from baking sheets and allow to cool completely on wire racks.
To make the filling, you’ll need:
1/2 cup of butter, room temperature
1 cup confectioner’s sugar
1 cup Marshmallow Fluff
1 teaspoon vanilla
Food coloring in your choice of color (optional)
In a medium bowl with a mixer set at medium speed, beat all ingredients until light and fluffy. Spread the mixture onto the inside of one cooled cake round and top with another. The finished whoopie pies look beautiful stacked and displayed as part of a dessert table, or are adorable packaged up and given out as favors. Your guests will love your twist on these traditional treats!
