Appetizer help........

Does anyone have advice as to what appetizers freeze well?

I have my sons 18th birthday and high school graduation coming up and I want to pre make some of the food and freeze it so I can enjoy some of the festivites and company.

I was thinking  burger sliders and taquitos, maybe a meat empananda(does anyone have a recipe??)

Then for deserts I was going to make 2 different cookie doughs and freeze them. Can I make the cake part for cake pops and freeze that w/out dipping in chocolate? Then I can dip them the day before. What about freezing cupcakes w/out frosting them? how do I defrost them so they dont get soggy or stale??

Any ideas thoughts or recipes welcome...............

TIA

Hello! All this sounds so fun and look at you being super mom. I have been reading several articles on cake pops including Martha Stewart and yes, you can freeze cake balls but be sure to put in an air tight container. It is also suggested when you pull them out to make sure there is no condensation on the cake balls. If there is, dab off with a paper towel.

Here is something I found on freezing cupcakes.

I am the google queen. Lol. I have never had empanada, but I love all things Martha Stewart and found this recipe on her website. Since I am sure you know what they taste like, maybe you can tweak the recipe to your liking.

And here's another recipe from Paula Deen who I also adore.

Tell me how everything turns out and take lots of pictures!

I am not a supermom, but most of  my sons friends know they can hang here and get a homemade meal which is rare in this day and age. Actually I never had a empanda but I thought it can't be that difficult.

I might make a sample batch of cupcakes to freeze and see how it works. I just worry about soggy or old tasting. One time I paid 3.50 for a fancy cupcake and it tasted old and I found it they make them and freeze them.

Thanks for your help.
