Buffalo Chicken Casserole

If you (or your SO) like wings, you are going to LOVE this.  I think I'll resort to calling it "Wings Gone Classy" because it has all of those amazing wing flavors, but you eat it with a fork :)

4 cooked chicken breasts, shredded 
3 celery stalks, diced
1 large onion, diced
2 carrots, diced
2 tablespoons olive oil
4 garlic cloves, minced
4 tablespoons butter
4 tablespoons flour
2 1/2 cups chicken broth
1/2 cup Frank's red hot sauce, Buffalo Sauce 
2 cups rice, cooked 
1/2 cup blue cheese or feta cheese


Preheat oven to 375, spray 9x11 pan with cooking spray.  Saute Olive Oil, Onion, Carrots, Celery, Garlic, till softened (desired texture- I left mine pretty crisp). Remove from pan and make a roux, melt butter on medium high heat.  Whisk in flour till mixture browns lightly, about 1 minute.  Whisk in chicken broth and Franks Buffalo Sauce to the butter/flour mixture, till it boils, then take it to simmer till gravy thickens, about 2-3 minutes, whisking the entire time.  Add chicken and vegetables to the sauce.  Take cooked rice add to 9x11 pan, spread evenly. Top with chicken mixture.  Sprinkle cheese over top and bake in oven for about 20 minutes.  Let set for 10 minutes and serve.


(Note: I boiled my chicken breasts in the chicken broth mixed with some hot sauce and shredded them after they were cooked through, so the chicken had an amazing buffalo sauce infused flavor to begin with...mmmm!  I then used that to make the sauce part.  Also, in the original recipe they use 12oz of macaroni, I changed to rice because I thought it sounded tastier.  They also said to use 1 cup of blue or feta cheese, I used blue cheese and thought 1/2 cup was plenty!  Blue cheese can take over a dish if you use too much.  Enjoy!)

I made this on Saturday for FI and my family - HUGE HIT!!


I cubed the chicken and cooked it in a non-stick pan.  As soon as I put the chicken in the pan I tossed about 1 tsp hot sauce on the chicken and stirred it up quickly.


I used feta and it was a huge hit (my family isn't big on blue cheese).

I LOVE this recipe- I can't wait to try it. I'll subsititute the hot sauce with just regular non-spicy buffalo sauce though. DH loves spicy, but me--- not so much. Dh would like Amanda's feta substitution too, but I like bleu cheese, so i'll think about it. Maybe ill be able to try this out tomorrow!
