CONTEST: PW Virtual Cookie Exchange 2013

With all the hustle and bustle of the holidays, there's so much to do! Shopping, wrapping, entertaining, baking....it's fun, but exhausting! 

Let's have a little virtual holiday cookie exchange! It's so simple...all you have to do is post a favorite cookie recipe (with pics if you have them) below. That's it! Lots of yummy goodies to share with your PW friends, and none of the work or calories! 

The best part is that one winner will be randomly chosen to win a $25 Amazon gift card! Wooohoooo!!!

So bring on those great cookie recipes!

I have literally just finished these (which is why they aren't on a pretty plate or anything yet!) My mom has made these every Christmas (and ONLY at Christmas) since the 70's! A Betty Crocker classic!!

 
1 cup butter or margarine, softened
1 cup packed brown sugar
1 teaspoon vanilla
1 egg yolk
2 cups all-purpose flour
1/4 teaspoon salt
2/3 cup milk chocolate chips
 
Directions
1- Heat oven to 350°F. In large bowl, mix butter, brown sugar, vanilla and egg yolk.
     Stir in flour and salt.
     Press in ungreased rectangular pan, 13x9x2 inches.
2 - Bake bars 25 to 30 minutes or until very light brown (crust will be soft).
     Immediately sprinkle chocolate chips on hot crust. Let stand about 5 minutes or until chocolate is soft; spread evenly. 
3 - Cool bars 30 minutes in pan on wire rack. For bars, cut into 8 rows by 4 rows.
 
Expert Tips
* For easiest cutting, cut the bars while they're still warm.
* Three bars (1.55 ounces each) milk chocolate, broken into small pieces, can be substituted for the milk chocolate chips. (I use Cadbury Dairy Milk...and at least 4 bars!)

1 1/2 cup flour

These are like cookie, brownie, fudge...different consistency lol, but tasty :)

Millionaire's Shortbread Squares

I make these every year. My kids go MENTALover them. i try not to ake them to often because they are SOOOO teribly good and adictiver...but SO SO bad ;)

 

Ingredients

For the Shortbread

o       1 cup flour

o       1 teaspoon baking powder

o       Pinch of salt

o       1/2 cup butter, softened

o       1/4 cup sugar

o       Splash of vanilla


For the Caramel

o       1/2 cup butter, softened

o       1/2 cup sugar

o       2 tablespoons corn syrup

o       1 14oz can sweetened condensed milk

o       Pinch of salt

o       Splash of vanilla


For the Chocolate

o       4oz semisweet chocolate

o       1/4 cup butter

o       1 teaspoon corn syrup

o        

o       Optional -  1/2 teaspoon sea salt (to sprinkle on top)

Directions

Shortbread

o       Preheat your oven to 325 degrees Fahrenheit

o       Combine the butter and sugar and mix well

o       Add flour, vanilla, baking powder, and salt and mix to combine

o       Press the dough into the bottom of the baking pan lined with foil

o       Bake 15 - 18 minutes or until lightly golden brown

o       Allow to cool fully

 

Caramel

o       Combine butter, sugar, corn syrup, and sweetened condensed milk in sauce pot over medium heat

o       Heat while stirring, until the butter is melted

o       Increase the heat slightly until the mixture comes to a boil

o       Continue heating and stirring until the mixture reaches an even almond color and thickens

o       Stir in vanilla and salt

o       Pour over the cooled shortbread and spread to evenly cover

o       Allow to cool for at least an hour in the fridge

 

Chocolate

o       Combine chocolate, corn syrup, and butter in a small mixing bowl

o       Microwave for 45 seconds and stir to combine fully

o       Pour over the caramel layer and spread to smooth

o       Optional - Allow to cool for several minutes, then sprinkle lightly with sea salt

o       Chill for several hours

o       Lift foil to remove from the pan

o       Peel the foil away from the sides of the bars and use a sharp knife to slice into 25 squares

o       Enjoy these rich and decadent treats!

 Hehe, yay! Let me know how u like them! Even though it was just a little peanut butter, the flavor def came thru! And they got better after the days went on.
