Cooking for Two

i found this cookbook photo 819851-1


i found this cookbook in the magazine section of barnes & noble, and after flipping through some of the pages, just had to try it out. the concept is that most recipes are written to serve 4, so the writers experimented and created recipes that will give you just the right measurements and instructions to make a meal for two without all the leftovers. (perfect for me and the hubs because i tend to cook meals meant to serve 8...) what's really nice is that they give a very clear description of their experimentation process, what worked and what didn't work, so you learn the technique and why it works.   


there are about 63 recipes, and they all look so yummy. not bad for 8 bucks! i plan to try out a few this week, so i'll let you all know how it goes!

oh good find! One other thing I have started doing is taking my leftovers to work for lunch the next day. It's so much better for me than fastfood and not so wasteful = )

Nice find!  I've gotten pretty good at proportioning things down because my fiance never eats leftovers (so annoying). :P

jbl - I do that too. I make however much the recipe calls for (most seem to serve 4 or 6), then we have tasty leftovers for lunch!

i actually love having leftovers! the thing is, when i cook i end up making way too much... so the leftovers last for two or three days. i'm just so used to cooking for a lot of people having grown up in a family of 6! so i'm hoping this cookbook will rein me in a bit.


i'm planning to try two of the recipes this week - one is a tortilla casserole and the other is chicken with sesame noodles. will post updates!

we tried the tortilla casserole tonight and it was delish! for the most part, it was pretty easy to make. the only thing that was a bit labor intensive was shredding the chicken breasts. i may try it with ground beef or ground turkey next time, just to make it a bit quicker and easier.


next i'm going to try chicken with sesame noodles!

chicken with sesame noodles was yummy as well!  i was actually able to skip a step because i had some leftover shredded chicken from yesterday that i was able to use in this dish.


and by the way, the tortilla casserole was even better the next day! (yes, even tho it was supposed to be only two servings, i still made too much and ended up with leftovers....)


so far, i really recommend this cookbook!

I need to find this book!  My friend gave me a Cooking for Two by Jessica Strand (I think there are several of these books out there by diff authors), but I can only eat about 1/3rd of what's in the book (not counting dessert).  I def want to try out some of the recipes though.  They seem to be a bit on the more gourmet side (Seared Scallops on a Bed of Fresh English Pea and Mint Puree... sounds totally delicious so I'll have to def try it some time.. when I have more time to cook. lol).

meocat - look for this one in the magazine section of barnes & noble! i really love it so far. and there's a good variety of recipes - italian, korean, chinese, comfort food, desserts...
