Ranch Burger Sliders


1 lb ground beef


1 egg


1 packet dry ranch dressing mix


24 saltines crackers


chopped onion (to your liking)


slider buns


any burger toppings you like (cheese, lettuce, A1..etc etc!)


 



  • Wisk egg and ranch packet together

  • crush 24 saltines crackers in the food processor

  • Mix beef, ranch mixture, and saltines together (but DONT over mix)

  • form burgers into small patties and grill

  • build your burgers!


*Makes about 10-12 small burgers*

Chicken Cordon Bleu roll-ups


2 eggs


2 tablespoons milk


1 tablespoon coarse or Dijon mustard


sea salt and fresh black pepper


1/2 cup seasoned bread crumbs


1/2 cup panko crumbs


1/2 cup all-purpose flour


4 chicken cutlets, 1/4-inch thick


4 slices deli ham (sliced on the thick side)


4 slices deli Swiss cheese (sliced on the thick side)


toothpicks


 




  • wisk eggs, milk and mustard together, seaso with salt and pepper



  • in another dish mix flour and two types of bread crumbs together



  • season each side of chicken cutlets with salt and pepper



  • place a slice each of swiss and ham onto chicken cutlet



  • starting at smallest side, roll chicken up and secure with a toothpick or two



  • dreg each roll up one at a tip in egg mixture, then roll into breadcrumb mixture



  • place on a roasting pan and bake at 400 degrees for 25 minutes



  • allow to cool for 5 minutes before serving :)

Lasagna Toss


A great alternative to the easy spaghetti dinner--the italian dressing gives it a little zip!


 


1 jar spaghetti sauce (we like Prego roasted garlic and herb)


1 lb ground beef


1 box of "no boil" lasagna noodles (about 8 noodles)


1/4 cup italian salad dressing


1 3/4 cup water


mozzarella cheese


 



  • Brown the ground beef in a big skillet, drain.

  • Break the lasagna noodles into small pieces (1" or so).

  • Add sauce, italian dressing, and water to the ground beef in the skillet and bring to a boil, then add the noodles and reduce to a simmer.

  • Cover, cook until the water is all absorbed by the noodles and the noodles are tender. Stir occasionally so it doesn't stick to the pan.

  • Sprinkle with shredded mozzarella and serve!


Tips:


You can use the standard "boiling required" lasagna noodles, just add 2 full cups of water instead of 1 3/4--we've just found that the "no boil" ones come out more tender (and DH really likes tender noodles! No "al dente" in our house...)


We usually get an 8oz block of mozzarella and shred it ourselves, and sprinkle some on top--you could do a pre-shredded cheese, but it melts so much better if you shred it fresh!
