Easy meal to wow your guests??

I have meals that I make all the time...but I want to make something impressive that isn't a complete challenge. What do you make for a dinner party of 6-8 people?

I'm Brazilian and I did a Brazilian theme dinner party once and this was a hit:


I had never made it before, but just popped it into my Crockpot for 4 hours and everyone raved about it. Easy and delicious!

I have a not-too-complicated entree that everyone in my house loves.  I've made it for company before and it always gets compliments.  My daughter calls it Apple Juice Chicken, which has stuck at my house.  It was originally called Parmesan Crusted Chicken.


Ingredients:


4 boneless chicken breasts


1-2 c. breadcrumbs (you can make them fresh or use store bought)


1 Tbsp. garlic powder


1 Tbsp. onion powder


1 Tbsp. Italian seasoning


1 Tbsp. Seasoned salt OR No-Salt seasoning


Black Pepper (optional, add to your taste)


3 Tbsp. grated Parmesan cheese (not the powder kind)


1 stick unsalted butter


1/2 c. apple juice OR white wine 


3-4 green onions, sliced (including tops)


Directions:


Preheat oven to 350F.  Grease a 9 x 13 baking pan.


Place breadcrumbs, garlic powder, onion powder, Italian seasoning, seasoned salt, and Parmesan cheese in a shallow bowl; mix together.  Melt butter in microwave.  Dip chicken breasts in butter then place in breadcrumb mixture.  Coat chicken breasts with breadcrumbs on both sides and place in baking dish.  Bake for 25 minutes (or until coating turns light golden brown ).


Reserve remaining butter.  Add apple juice and green onion to the butter.  


Pour butter mixture over chicken and bake an addition 5 minutes.  


Enjoy!

My go to dish is Chicken Tetrazzini, I got the recipe from foodnetwork.com (Giada De Laurentis) and serve it with french bread and colorful salad...never fails!

Got this recipe from "Mexican Made Easy"... ah-may-zing!!!!!  And it's vegetarian, too! (Which I'm not, but it was so delicious)  You could probably add shredded chicken to the layers or even ground beef if you wanted meat!!  Prep time is about 20 min, cook time is 1 hr 20 min so it gives you time to set up/clean up while it's in the oven!!


Corn and Pablano Lasagna



Ingredients



  • 4 tablespoons unsalted butter, divided

  • 3 cloves garlic, minced, divided

  • 2 cups fresh corn kernels (from about 2 ears), or frozen and thawed

  • 2 cups heavy cream

  • 1 teaspoon fresh thyme

  • Salt and freshly ground black pepper

  • 1/2 cup thinly sliced white onion

  • 1 large zucchini, thinly sliced lengthwise

  • 4 poblano chiles, charred, peeled, stemmed, seeded and cut into 1-inch strips

  • 12 (7 by 3-inch) no-boil lasagna sheets

  • 2 cups shredded Oaxaca cheese, or mozzarella


Directions



Preheat the oven to 350 degrees F.


 


Melt 2 tablespoons butter in a medium, heavy saucepan over medium heat. Add 2/3 of the garlic and saute for 1 minute. Mix in the corn and saute for 5 minutes. Stir in the cream and thyme. Cook over medium-low heat for 5 minutes for the flavors to incorporate. Turn off the heat and let cool slightly. Transfer to a blender and puree until smooth. Season with salt and pepper.


 


Heat the remaining 2 tablespoons butter in a small, heavy skillet over medium heat. Add the onions and saute until translucent, about 5 minutes. Add the remaining garlic and cook for 1 minute. Mix in the zucchini and poblano strips and cook for 5 minutes for the flavors to incorporate. Season with salt and pepper. Turn off the heat.


 


Spread about 1/4 of the corn mixture over the bottom of an 11 by 8-inch baking dish. Cover with a layer of 3 lasagna sheets. Spread 1/4 of the poblano mixture and 1/4 of the cheese over the pasta. Repeat the layering 3 more times. Cover with foil.


 


Bake until the pasta is cooked and tender, about 50 minutes. Remove the foil and turn up the oven temperature to broil. Broil until golden brown and bubbly, 8 to 10 minutes. Let stand for 15 minutes before serving.

Oh, and there was an amazing salad served on the side in the episode which I also recommend...


Crunchy Garden Salad



Ingredients



  • 8 ounces radishes, thinly sliced

  • 1 large cucumber, thinly sliced

  • 1/4 cup fresh mint leaves, chopped

  • 1/4 cup fresh cilantro leaves, chopped

  • 1/4 cup lime juice (from about 2 limes)

  • 1/4 cup olive oil

  • Salt and freshly ground black pepper

  • 2 cups arugula


Directions



Combine the sliced radishes, sliced cucumber, mint and cilantro in a medium bowl. Whisk together the lime juice, olive oil, and salt and pepper, to taste, until well combined. Pour the dressing on top of the salad and toss to combine. Place arugula on a serving dish and top with tossed salad. Serve immediately.

this recipe is my own concoction but it is all from canned stuff basically so its super super easy. In electric skillet brown 1lb hamburger with 1 onion chopped finely...meanwhile in large stock pot pour in 3 cans Butter Beans not drained,1 can Chili Beans,2 cans stewed tomatoes with jalepenos,1 smallest size can of green chiles,2 smallest size can of beef broth,2 smallest can of tomatoe puree,and two or three depending on preference cans of mushrooms and tex mex -chili seasonings...when hamburger and onions are done add them to mixture...is amazing serves a small army.


 


Sally New York Style Choc Chip Cheesecake


Preheat oven to 325


In large mixing bowl combine 5 blocks cream cheese,1and a half cup sugar,3 Tbsp flour,1 Tbsp cooking vanilla,1 smallest tub of sour cream...beating on lowest setting...then mix in gradually one at a time 3 eggs...Stir in about 1/2 bag of choc chips i prefer guittard silver bag if u can find them. In 2 premade choc pie crusts pour in mixtures Bake in oven for about 1 hr and 5 minutes..really simple...super delicious
