Easy meals to precook and freeze?

Hi ladies! I need some inspiration for easy meals to precook and freeze. My MIL is going through a really hard period and my FIL just CAN'T cook. So DH and I were thinking about helping out by precooking some meals for her to freeze and then easy heat in the oven or microwave.


Do you have some ideas, inspiration?

Pastas, Lasanga, spegetti, meatloafs (make  minis in a muffin pan then put in freezer bags as meals), make burgers and freeze,enchaldas....any casserole,  you can even make up batches of waffles and pancakes muffins to pop in the toaster or microwave.


does she have a crock pot? you can make soups and freeze then just put the frozen contents into the crock pot turn it on stir every hour till thawed. Chili works too.


I am a big fan of Rachel Ray she has tons of ideas on her website easy to make and she has a lot meals that you can freeze and are easy to fix.


If theres only two people I would portion the food out into ziplocs label and freeze.

I love Rachael Ray!!

Anyway, I make meals for my Grandad every week (he's 92, bless him, so I don't like him using the oven!).

I make a lot of soups - leek & potato and broccoli, cauliflower & cheddar are his favourites. I use the small aluminium trays (like you sometimes get with take-out meals) so all he has to do is take it out of the freezer and put it in the oven, he eats straight out of the tray now too so there's very little washing up to do most days.

I make pot-roast, stew, pulled pork, roast chicken dinners. So far the only things that haven't frozen well are broccoli and roast potatoes.
He doesn't eat pasta, but I used to always make big lasagnes and freeze portions for me & FI when we were both working and it was great. Things like bolognese sauce and chili tend to taste better second time around too!!

Thank you ladies! That's a great help as I have no idea about freezing stuff... (no really, I just have some ice-cream and some peas and leaf spinach in my freezer... and it's a very small freezer too....)
