Easy recipe for parmesan chicken?

Anyone have a yummy/easy recipe for parmesan chicken? My DH is extremely picky, but I think he would like it. He says he's never had it, but he likes spaghetti and several types of chicken, so I figured if I make him some he might at least try it. :) I had a good recipe saved on my computer that crashed. :( I want something fairly simple so that I don't spend a huge amount of time cooking in case he doesn't like it. haha

jenniboo -- he's seriously never had chicken parmigiana?! wow! i'll see if i have a recipe at home. we don't really make it since we're lucky enough to have an amazing & cheap place nearby ----> FI's grandma : ) lol

I can't believe it either almostdunne. He's SUPER picky. To the point that it's ridiculous. If I didn't love him it might be an issue. haha But he likes most kinds of chicken and he likes spaghetti too. So I figured it's worth a shot. :)

EASY CHICKEN PARMESAN  

 


1 egg
1 c. milk
Italian seasoned bread crumbs
Vegetable oil
32 oz. jar spaghetti sauce
Mozzarella cheese
1 pkg. boneless, skinless chicken breasts

 


Tenderize and flatten chicken between 2 pieces of plastic wrap. Combine beaten egg and milk. Dip chicken into egg-milk mixture, and then into bread crumbs coating each side. Fry coated chicken in just enough oil approximately 4 minutes on each side or until golden brown.

Place fried pieces in a rectangular baking pan. Pour spaghetti sauce over chicken and cover pan with foil. Bake 50 minutes. Uncover and sprinkle with cheese. Bake uncovered 10 more minutes.

Here's what I do:


Brush chicken breasts with olive oil or egg whites. Coat in Shake'n'Bake (italian is great). Place in baking pan/casserole dish. Pour pasta sauce on top. Cover with top or aluminum foil. Bake until chicken is cooked through. Remove cover and sprinkle with fresh parmesan. Put back in oven for another 10-15 minutes.


Very easy!
