Perhaps speak to your FI about it before giving him a definite answer?  Have you seen his baking before?  And do you like his cooking?  Is it his profession?

What do your instincts tell you?  You could always ask him to make a few samples and then reach a decision?

I agree with adamsapple. If your instincts tell you otherwise maybe you could politely tell him that you would love for him to enjoy your wedding rather than have to work, cake baking is a huge task!

is there one dish he can do really well? maybe he could focus on that. And then use what nicolejuliette said.   I would leave the cake to someone more professional.

I would go over it with your FI and make a decision together and that it would be no hard feelings if you dont pick him to do it. I would go with what adamsapple suggested, have him make you a few samples and see how he does. Then go from there. It is a big responsiblitly so you'd have to make sure he is serious and would have the time to do so.

When are you getting married?  Wedding cakes are expensive to PURCHASE, but not terribly expensive to make. You could ask your FI's son to make three cakes -- full on cakes, exactly as they'd be for the wedding -- for you to see and sample, and then host a "cake party," inviting all of the close family and bride's maids / groom's men.  Make it a fun event. You'd get to browse cake designs with any other cake maker, so this is not an unreasonable request.

One of several things will happen:

1.  He'll decline, in which case it's easy for you to also decline his services.

2.  He does it and ... who knows?  Maybe he's fantastic!

3.  If you do the cake tasting event and he isn't fantastic ... well, you'll have the proverbial proof right there, and a place to start the discussion.

You could also browse the Internet for pictures of what you'd like your cake to look like and give them to him as templates for the tasting night.  This may further push him to either say it's out of his league, to really come through on great cakes, or to give you an even stronger platform -- in comparing his work to what you gave him as far as images -- in helping him to understand why you "would rather have him just enjoy the wedding."

In the end (and I say this a lot), the day is not about your cake anyway.  It's about YOU.  And anything that doesn't look like it hopped out of a magazine only serves to make your day YOUR day, and not a stock day that people will forget.  What I'm saying is that, no matter what you decide, it's going to be great!
