Holy mac and cheese, Batman!!

Hey girls...I had a girlfriend over for lunch today and made this "grown up" mac and cheese for us.  All I can say is WOW!  SO good!!  That Barefoot Contessa really knows her stuff!!  Just wanted to share!

This one was the perfect amount of cheese, but it's not the typical cheddar.  It also has gruyere and blue...aaaaand bacon.  Mmmmm, bacon.  I paired it with this salad, also with bacon, and it was amazing too!

My girlfriend that came over is pregnant and has been craving bacon sooooo, I ran with it.  Hey...if I have to suffer through a lot of cheese and bacon to make a friend happy, then I'll do it!  Ha!!

yummy..i havent tried it w/ blue cheese..but this is how i make my mac and cheese..but i use gruyere, sharp white cheddar, parmesan and fontina w/ pancetta..i add a little drizzle of truffle oil and panko bread crumbs..soo yummy..

Alatiel - it only calls for 2 ounces of blue so it's not really over powering. You could use gorgonzola instead which is a much milder blue cheese? I'm not a big blu fan either and I didn't feel like all I was tasting was the blue cheese...
