Chicken enchiladas, leftover from our work potluck today!
I've started this thing of taking pictures of things I cook...I know...SO LAME!!! lol
This was the Mother's Day dinner I cooked, Honey Ham, Steak, "Faked" 3 Cheese Mac N Cheese, Mashed Sweet Potatos with Honey Butter & Cinnamon, and Spicy Collard Greens
**Both of these plates are FI, I do NOT eat this much in a sitting!!! lol
This was Tuesdays dinner, Broiled Steak (little too broiled, lol) Buttery Sweet Corn and Parmesan Mashed Potatoes with Garlic Brown Gravy.
I want to learn to make Enchiladas, I have so many recipes, but they seem daunting to make.
Chances, Enchiladas aren't too difficult. :) I make them all the time when I'm feeling lazy. the trick is to make flat instead of rolled. then it's pretty much like making scalloped potatoes, except with small tortillas (and chile, and chicken... lol). I prefer green chile enchiladas, with a fried egg on top... yummy! (then it's breakfast ;) )
I remember my grandmother making them from "scratch" and it seemed like she was in the kitchen forever, lol!

Ok, my quick version...they are delicious!! Everyone was asking for the recipe today :) They aren't your typical red sauce enchiladas but they sure are tasty!
Ingredients: 4-5 cooked chicken breasts 2 small cans of diced green chilies 3 cans of cream of chicken soup 1 pint of sour cream 4 cups of cheddar or Mexican cheese (or more if you would like!) Tortillas
Cut up the cooked chicken breasts. Spray your glass baking dish with Pam. In a large bowl mix the soup, sour cream & green chilies. Put a large spoonful of the soup mixture, chicken & cheese into a tortilla, roll it up & place in the glass baking dish. Spread the leftover soup mixture onto the top of the rolled enchiladas & sprinkle with cheese. Bake for 40-45 minutes @ 350º. Serve with salsa.
Plum, that is the recipe I use! Try to find Old El Paso green chile (or Hatch green chile) if you can! It's the best! You can also make it with the red chiles the same way... OR you can make the christmas, with both kinds of chile! mmmm....

I ate dinner at my grandma's tonight like every Thursday night, so you know it was good. She made mexican chicken with rice and all the fixings (guacamole etc.). She also put my fiance to work making margaritas. Yum.
I''m late butttt I made balsamic chicken with carmelized onions with rice and broccoli :-)
When I make enchiladas, I really cheat. I dont even roll mine. I make them in like a lasagna form. I put some sauce in the pan, then put in tortillas, cover with refriend beans/meat/cheese mixture, then repeat and then on the very top I put tortillas, sauce, and then cheese.
i don't know what we're having... it's date night and FI always waits until last minute to pick the restaurant!! haha
