Making a menu card (without all of the meal items)

We're having a buffet but I would like a menu card at each table so guests know what's available before getting in line. We've selected our salads and entree's but the chef selects the accompaniments (1 starch and 1 veggie). We don't know what those items are until 2 weeks before the wedding and I'm not big on waiting!! I want to start on the menu cards next month to get them done and over with. Should I make the menu cards with the salads, entrees and dessert and leave off the accompaniments or should I state (somehow) that there's more food but we just don't know what it is yet?? TIA!!

In many restaurants, the menu will state "chef's choice" for certain things (especially fish) which usually indicates that the chef will be selecting a dish based on what's the freshest that day. Maybe you can write something similar?

The starch part may be hard, but for the vegetables is is usually a medley of some sort? Then you could just put that, so guests would know there will be some kinds of vegetables...

Also what if you have the everything ready- the paper and file with the menu made, so when you find out you just have to print them? I know you don't want to wait- but then they would be complete... I don't think it would take too long- unless your having a huge wedding of course :)

Oh geez, why didn't I think of that!! Thanks marjan, exactly what I was looking for!!

True HMM, if I could get a grip on my patience all I would need to do is fill in the missing items, print, cut, insert into frame and that would be the end of it (2 hours max for 16 cards)!

pinky, I agree with HMM, get everything ready and as soon as you know what the items are print and assemble. I know for myself I would be frustrated if I didn't have all of the info on there.
