Molecular Gastronomy

Lately I noticed some chefs on the Food Channel and Top Chef cooking by molecular gastronomy (applying science to cooking). It's kind of cool to eat stuff "cooked" by liquid nitrogen. Has anyone had this before? Where did you eat and how did you like it?

I've done it once myself. It's pretty fun playing scientist, but it definitely takes practice to get the right results.

I saw someone on Iron Chef America do it. I think he's based in Chicago though. Someone needs to open one of those places in the Bay Area because it sounds so cool!
