My Christmas baking has started!

So, I've started on some baking for the Christmas season.  DH and I are going to a party tonight, so along with corn dip (oh my gosh, seriously amazing!), I've baked cherry nut slices (think a bit like shortbread cookies with finely chopped walnuts and maraschino cherries) and poor man's gingerbread (there's no ginger in it whatsoever--dark brown sugar, flour, butter, cinnamon, nutmeg, baking soda, eggs, and buttermilk).  Later on, a bit closer to time for us to go, I'm going to make some lemon sauce to serve on the side of the gingerbread.  Oh, I so love this time of the year!

Corn Dip

2 cans Mexicorn (corn with red and green peppers), drained

1 small can chopped green chiles

6 jalepenos, seeded and chopped

1 bunch of green onions, chopped

2 cups finely shredded Mexican cheese (I used a nacho/taco cheese)

1 cup sour cream

1 cup mayo

Chili powder, cilantro, and cumin to taste

Mix all together; it's good right then and there, but it's best if you let it set over night.  EVERYBODY was raving about all of the things I brought tonight.

I made a REAL Marble Pound cake.

1lb butter 2.5cup= 1 pound but I suggest 3 cups

1 lb butter or 4 sticks

9 large eggs

2 table spoons vanilla

For Mable pound cake divide batter in half and mix in 3/4 cup Hersey cocoa Powder

This is enough batter for 2 small round cake pans or 1 to 2 bundt pans depending on size.

I am also making STAMPED Sugar cookies Do not use baking powder or baking soda because you will loose details.

Now I am going to make paper mache christmas ornaments.
