Need input from vegetarians

Ok, so what is the best vegetarian option you have ever gotten? I don't like the one that our venue suggests, but I am a meat-eater, so I may be totally off on what vegetarians are the happiest to see on a menu. Just to give an idea: the other guest will be getting a duo of filet mignon and mahi mahi, so I want the vegetarians to get an equally nice option if possible.

i think you could go with something like a veggie lasagna thats usually really good there is more but my mind just went blank-sorry I'll post again

oh yeah I remember now I love vegetarian moussaka yum yum or anything with eggplant.  Or you could do a veggie salad but with zucchini and asparagus with some balsamic (the thick kind) yum I love eating vegetarian and so does FI but we also love our meats and fishes.  But we go both ways.

I'm a veggie girl.  Our veg option will be Napolean of Grilled Vegetables on Grilled Polenta with Red Pepper Romoulade (sp? a.k.a sauce).  Our veg cocktail hour app is truffle and wild mushroom pizzeta. and our salad course is sans baco-bits ;)

the penne and ravioli options mentioned above sound great. i used to be a vegetarian and would generally prefer pasta dishes. i think they are generally a safe bet as not all vegetarians are into heaps of veggies. also, if you are serving wine or other alcohol, pasta is a good idea as it'll help to line the stomachs. ;)

Oh how I love polenta rounds sauteed in olive oil with sauteed onions and broccoli and melted goat cheese as an appetizer. This can have fresh corn mixed with the broccoli too...


For the main course I would avoid any red sauce as this tends to ruin people cloths if they spill..


Roasted garlic bulbs, sprouted sliced bread, butter or olive oil, side leafy greens salad with shredded carrots, beets, toasted pumpkin seeds with an olive oil and balsamic vinegar dressing and grated goat cheese.


Main Course options


Pesto pasta with the pesto containing olive oil, basil, macadamian nuts or pine nuts or sunflower seeds, garlic, salt and lemon.


or


Steamed Greens with garlic and sesame and Mashed potato's with butter.

i had a "veggie tower" at the last wedding i went to (i'm not a complete veggie either, i eat dairy, eggs, and fish) it was like various veggies and polenta rounds stacked in the center of the plate...it was delish....at the Marriott on the Wharf in Boston...
