NWR: Share Your Most Healthy Snacks/Meals!

So lately I've been doing nothing but worrying about getting back into shape/fit, eating right, etc.


I would like to make this thread about healthy snacks, I am an open book to try new healthy meals, snacks, all of it! So PLEASE share anything and everything! :))


I'll share one of my all time favorite snack, which would be.....


apples and peanut butter. Can you talk about YUM!!

I make homemade protein bars and they are AMAZING. You feel like you are eating cake but one or two of those bad boys will fill you right up and they are good for you! (They use baby food because there are no additives in baby food. If you want apples you get nothing but apples!)


These are my favorite:


Pumpkin Protein Bars


½ cup sucanat


4 oz. baby food applesauce


2 tsp. ground cinnamon


1 ½ tsp. ground ginger


½ tsp. ground nutmeg


1 tsp. baking powder


1 tsp. baking soda


½ tsp. salt


2 tsp. vanilla extract


4 egg whites


15 oz. raw pumpkin


2 cups gluten free oat flour


2 scoops vanilla whey protein


½ cup almond milk


½ cup chopped walnuts


 



  1. Preheat oven to 350

  2. Spray a 9x13 glass dish with non-stick spray

  3. Combine first 11 ingredients and mix well

  4. Add the final 4 ingredients, and mix until incorporated. Spread batter into the dish and bake for 30 minutes


 


Makes 24 squares


I also make turkey or chicken "meatloaves" that I make in muffin tins so they are a great meal or snack when I am hungry. Or just a handful of almonds!
