NWR: what to make out of rotisserie chicken

Sometimes, when I go grocery shopping, I end up being so hungry that I want to buy everything in sight.  (wait, come to think of it, I always seem to go when I'm hungry!).  I live by myself, but FI is usually here 4-5 days out of the week anyway.  Sometimes, I've had such a long day from work that I don't want to cook or too starving to cook so I end up buying a rotisserie chicken from the hot deli section (or Costco if I make it there.. I love how HUGE that chicken is), fixings for salad, etc for a quick dinner meal.


Oftentimes, if it's both of us, we only end up eating just one of the breasts, a leg and a wing.  If we're lazy, then we'll just save it to eat it again the next day, but sometimes, we don't want to eat the same things two days in a row.  This is where I try to get creative.  Usually, I also make a list of grocery items if I plan on buying a chicken so that I can make other things out of it.


Here's what I've made so far:


-fajitas (onions, mushrooms, bell peppers)
-chicken noodle soup (using remaining breast meat, chopped)
-shredded thigh meat (I don't really like thigh meat but in this it is goooood!): made into hoisin chicken buns (this is my friend's bento site. it's super cute! her website also has tons of great recipes too on www.cookingcute.com)
-chicken tortilla soup
-I sometimes chop up breast meat and mix with chunky salsa and cheese to eat with tortilla chips too because I'm weird.
-chop the chicken breast up and put it in a salad.. I really like spinach salad with a balsamic vinaigrette dressing, cucumbers and dried cranberries
-my friend has made chicken enchiladas using rotisserie chicken too


 


I tend to make a lot and freeze the soups and chicken buns in the freezer.  Sometimes I don't get a chance to do that since FI inhales most everything I make anyway.


I'll come back later to post some of the recipes on here too!  I'm one of those people who alters recipes all the time so remember to taste it first! hehe.

Thank you for this! My FI and I would buy the Costco rotisserie when we get lazy as well. Now we can change it up a bit :D

I LOVE costco rotisserie chicken!!!  I think they should put the chicken right in the front so people can just run in and grab one instead of walking all the way to the back!  (but that's just me being lazy!)


I think you about covered it in terms of things to make with the chicken.  Sometimes we'll just throw the carcass with the meat into the crock pot with a bunch of other random ingredients and see what comes out of it.  What about chicken porridge?

my sister makes delicious enchiladas with rotisserie chx!!!  and you can mix it up with red and green sauces!!! yummmmmmm!

i like shredding and making a chicken salad with low fat mayo, celery, cranberries, and sometimes pecans and stuff

The chickenpot pies and chicken salad are good ideas. It would probably make for a good sandwhich too, just the chicken, lettuce, tomato and a couple condiments on some french bread. YUM. I like quick easy lunches. Anyways, I think it's a great idea to mix it up, I'll definately be stealing your ideas on this one : ) I LOVE rotisserie chicken!

mm.. I haven't had a chicken pot pie in like.. 15 yrs. lol.  The last time I ate it was when my dad bought the frozen kinds. I think I stopped eating them since they have tons of fat and calories.  I should look into making it myself!

I make a chicken pot pie recipe that I got off of Oprah....it is just a cornbread top...not an actual pie crust all around...SOOOO GOOD and it only takes like 30 minutes to make! I also make chicken enchiladas that O got from the same show!!


Oh...and I make pasta salad with chicken too!!! I make it just like a potato salad but with pasta!

Yep. I put in cabage, match stick carrots, almonds and the yummy chow mein noodles. We make wraps out of the left overs!

oh wait, I lied.  I think I had chicken sausage in my omelette before.  It was at Cheesecake Factory. It wasn't that good.. don't get it. haha.
