Reception Food Brainstorming Q's!

We're having a beach/backyard wedding next summer.  Prob around 100 people, give or take traveling guests & kids. We've always talked about having a reception and wedding that's very fun & laid back. For a few years we've talked about doing some awesome late night snacks & sweets for the food instead of a big dinner. (Every wedding we've been too we haven't been able to remember the food a week or two after, let alone years later. And half the time it's not good enough to eat too much anyway. So to us, not worth the time/cost. FI hates having to sit and wait for everyone to eat! Ha!) 

Q is, we're having smores, sweets, cupcakes, etc. Plus beer, sweet tea & sangria with water & coffee too. As for the 'snack' ideas we're not sure about it. Just a simple junk food table with tons of our faves on it and some fruit & veggie trays? Or something a little more fancy like some great mini-pizza, or something similar?  Our ceremony is around 7-7:30 depending on weather & sun and a lot of people will be told they can skip that and just come to the party around 8 or 8:30 (veryyy quick ceremony! with a few pics after but not many as we're doing most before.)  We're not doing anything too formal. I just need some help and direction with the whole snack idea. There's really 2 different directions, or a combination of both?!

Notes: Our fam & guests will be doing some foodie restaurant hopping in the area since it's a hugely famous area for food! We also eat way earlier here than in the cities. Bridal party & essential helpers will be eating a larger bbq dinner before pics.

 I would do the veggie tray, maybe a meat n cheese tray, fruit tray, maybe a couple appetizer things like the pizzas you mentioned. Maybe a dessert/candy bar too

 It sounds like a great day, mine was very laid back (a lot smaller than yours!) so I totally get where you're coming from.

I think having a mixture of both your fave snacks and some more filling items like pizza would be great. Do you have anywhere that you could keep things chilled so you could do chicken wings etc?

 Totally hate chicken wings but FI loves them so that may have to happen! ha! I'm definitely thinking light/mini-pizza's somehow and also prob a popcorn bar as well. Plus possibly fruit/veggies and the sweets. But I'll prob make final decisions based on the numbers we get back from RSVPs.

 A popcorn bar sounds fun!!! Rachael Ray did a show (maybe before a Super Bowl?) with lots of different popcorn flavours, it was great. I'll see if I can find the recipes....

I love weddings with casual/fun food! I think it would be really fun to do stations. Spread out in different spots in your reception area, having a snack food station, a taco station, a bbq station, a pizza station, etc. Almost like a food truck concept, but just stations instead. I had a cousin that did a version of this at her backyard wedding, and it was great!

 What we're leaning towards now is the sweets table + smores bar around the firepits and then doing a popcorn station and a mini-pizza slice station plus sangria + beer (and some simple non-alcoholic drinks for my side of the family that doesn't drink and for the kids!) We still have months to finalize stuff but this is definitely the direction we are headed.

 

Now it's a matter of how much pizza and popcorn to do?! ha!  We're expecting between 80-100 guests, but as I said, a large portion don't drink, but the ones that do are our cousins + friends so they'll prob drink a lot, but we don't want enough for people to get trashed (happened wayyy too many times before at other weddings.)  And since everyone will have eaten already we may bring the pizza out later in the evening and just have the popcorn going all night from reception start on...anyone familiar in having a popcorn bar and how much to order/make?

 Look into getting a hot dog and sausage truck to drive in and serve guests.  they can keep the food hot, safe and bug free.  Do a sweets table, but be sure that most is wrapped or use cake domes.  I would avoid cheese as it could melt and get yicky.  do a table with jugs of lemon iced tea, fruit punch and lemonade, a big bin of water, soda and wine coolers.  Get beer and a signature drink.  Popcorn in bags and assorted candies that can be put in cello bags would be great.
