Roasted Cauliflower!

If you haven't had roasted cauliflower, you need to, uh, make it RIGHT NOW. :) DH and I devoured all of it right out of the oven and I'm almost mad I've never had it until now. It's also low calorie and low carb!


I used this recipe off Epicurious, but I don't think you can really screw it up:

I took some photos:


Chopped up the florets


If you haven t photo 1622226-1


Coated them with E.V.O.O., salt, and pepper

Came out slightly browned (in retrospect, I would have caramelized them even longer)

Yum! Thanks for posting!  I have recently fallen in love with cauliflower and I love making fake mash potatoes out of cauliflower!! They taste delicious and without all the guilt!  I have also make a cauliflower pizza, where instead of using pizza dough I used cauliflower for my crust and loaded it with fresh veggies…SOOOOOOO GOOD and guilt free!!!

I made a quiche with roasted cauliflower in it. Probably the biggest hit ever! My FI, who used to say ew to cauliflower is now converted.

I tried this last night and OMG it was amazing like I mean out of this world!!!! I threw some broccoli in with it and OMG I loved it! I had a few bites this AM cold and it was just as good:)

I made it last night.  It was delicious and so easy to make!  DH said it looked so fancy and he couldn't believe all I did was toss it in olive oil and salt haha.

Okay- is it just me- but it tasted exactly the same???  Not really different or 'sweet' like the recipe lol not to be debbie downer or anything- just wondering what I did wrong ;)

HMM - did you roast it to the point of it turning brown around the edges? I added ground pepper to my version (didn't know I wasn't s'posed to) and it added to the flavor. I think the longer you roast it the more you can taste the sweet carmelization. HTH's!
