Roasted Cauliflower!

If you haven't had roasted cauliflower, you need to, uh, make it RIGHT NOW. :) DH and I devoured all of it right out of the oven and I'm almost mad I've never had it until now. It's also low calorie and low carb!

I used this recipe off Epicurious, but I don't think you can really screw it up:

I took some photos:

Chopped up the florets

If you haven t photo 1622226-1

Coated them with E.V.O.O., salt, and pepper

If you haven t photo 1622226-2

Came out slightly browned (in retrospect, I would have caramelized them even longer)

And onto my plate and into my BELLY!

If you haven t photo 1622226-4

I think I could eat this every day.

Yeah - the more you brown it, the more you get out of it. Kaytana, actually, I added pepper too, maybe I should have noted that in my OP.

I added pepper too and roasted it till many edges were brown. I've made this 10 times probably so far, great substitute for potatoes:)

@HMM, it tasted exactly the same as what?  I don't think it tasted any different than what cauliflowers are supposed to taste like, but only the texture is different and the brown spots added a bit different flavor and texture.

I will try it again and cook it longer, I don't think it was browned enough- although I had it in there forever lol
