If you haven't had roasted cauliflower, you need to, uh, make it RIGHT NOW. :) DH and I devoured all of it right out of the oven and I'm almost mad I've never had it until now. It's also low calorie and low carb!
I used this recipe off Epicurious, but I don't think you can really screw it up:
I took some photos:
Chopped up the florets
Coated them with E.V.O.O., salt, and pepper
Came out slightly browned (in retrospect, I would have caramelized them even longer)
And onto my plate and into my BELLY!
I think I could eat this every day.
