Yay, I just got two brand-new cookbooks that I will start making recipes from. I will definitely be posting them and I can't wait to see what we all come up with. : )

Here are 2 that I plan on trying from my new cookbook:


Chicken Cheese Enchiladas


1 can nacho cheese or cheddar cheese soup


1/2 cup milk


2 cups cooked chicken, diced


1/2 cup salsa


1 (4-oz) can chopped green chilies


1 teaspoon chili powder


8 flour tortillas


 


In a bowl, combine soup and milk and set aside. In another bowl, combine chicken, salsa, chilies, chili powder and 2 tablespoons of soup mixture. Along one side of each tortilla, spread about 1/3 cup ofchicken mixture. Roll up and place, seam side down, in a greased 9 x 13 baking dish. Spread remaining soup mixture over enchiladas. Cover with foil and bake at 375 degrees for 35 minutes or until bubbly.


 


 


Salisbury Steak


1 egg


1/2 cup dry bread crumbs


1/2 cup ketchup


1/4 small onion, minced


1 pound ground beef


1 envelope mushroom gravy mix


1 cup water


 


In a bowl, combine egg, bread crumbs, ketchup and onions. Add ground beef. Shape into 4 patties. Brown in a skillet. Drain and remove patties from skillet. Blend gravy mix and water together in skillet. Stir until smooth. Add patties to gravy. Cover and simmer for 10 minutes. Serve over wide noodles.

Yesterday I made:


grilled codfish on green lentils with pak choi


I love lentils and I think they go wonderfully with fish. I had made this with poched salmon too.



For the lentils:
Half onion finely chopped, 1-2 carrots chopped, handful bacon cut in small pieces. Heat 2 tsp of butter in a pan and fry/cook those 3 ingredients til the onions are glassy. Add a cup of (rinsed) green lentils and 2 cups of water, aswell as seasoning (salt or bouillon). Simmer/cook until the lentils are done. Add a tsp of tomato paste, pepper and if desired some paprika. Before serving add a hint of cream/or sour cream. Taste it and add more salt/pepper if needed. The bacon gives a great taste.
Takes about 20 minutes to cook.


For the fish:
cut the filet in regular pieces of about 5x5cm, season it to your taste (not too much, as the lentils do have a strong flavour). Melt enough butter in the frying pan and cook the fish for 2 to 3 minutes on each side.
Takes about 10 min. to cook.


For the Pak Choi:
Cut into pieces, wash it of and fry it with olive oil, salt and pepper.
Takes about 10 min. to cook.


For the serving: I usually put the fish on the lentils and the greens around it.


It's yummy!

How to make it





  • Preheat oven to 475 degrees. Line a shallow roasting pan or 9-by-13-inch baking dish with aluminum foil. In a large bowl, mix together honey, soy sauce, and 1/3 cup water. Add chicken, and toss to coat; season with salt and pepper. Transfer chicken and honey mixture to prepared roasting pan.

  • Bake chicken, basting with juices from edges of pan every 10 minutes, until well browned and an instant-read thermometer inserted into thickest part of drumstick (avoiding bone) registers 165 degrees, 30 to 40 minutes. Serve chicken drizzled with pan juices
