Should i fire caterer ?

Ok so technically the caterer isnt hired yet. I met with them last sunday and went over everything i wanted. Then like tues-ish i spoke with the assistant and went over ideas on the phone and setup time to meet at the hall yesterday (saturday) . When we spoke on the phone Tuesday i gave her what i wanted a chicken and salmon entree option and told her i was open to side items. She emailed me on thursday what we discussed but no other side items, and I previously told her i wanted a price quote on the menu i choose and another price quote on menu B other dishes/ options to choose from. Its sunday and I havent recieved this. We pushed our day back to April but I am moving soon out of state and the wedding will still be here in ga since hall is booked and baker already. I am moving in a month and i was supposed to meet with the Cater yesterday she text me friday night and says she cant make it. I text her back asking what other times she can no response. I called her no response yet. Hmmm. I just dont like the professionalism/ lack of . My fiance is saying give her time, but since i only have a month to get a caterer before i move i wanted to get this out the way asap so i can deal with finding florist & everything else. I just feel like she should be more proactive giving me more options ect. I've had the food from their catering and its really good but i dont like thier customer serivce.
