Our venue has a pretty extensive STANDARD menu, so we have a lot to choose from, and kind of did that really early, we are still doing a tasting in the coming months, but we chose (tentatively) off the menu what we like.


COCKTAIL HOUR


11 Passed BUTLER STYLE HOT HORS D'OEUVRES


White Gloved Service



  • Chicken Brochette
    Skewers of marinated chicken with roasted bell peppers and onions

  • Coney Island Cocktail Franks
    100% Beef Cocktail Franks with sauerkraut and mustard wrapped in a pastry puff

  • Quesadilla
    Tortilla rolled into a cone shape and filled with cheese, chicken and spices

  • Mushroom Caps with Crab Meat
    Mushroom caps stuffed with jumbo lump crabmeat

  • Assorted Kinishes
    An assortment of pastry puffs filled with potato and cheddar cheese.

  • Beef Sate
    Beef Sirloin on a skewer

  • Mini Quiche
    Fresh Spinach with eggs and cheese in a pastry shell

  • Risotto Croquette
    Whole grains of white rice, centered with cheese, rolled, breaded and fried

  • Crab Croquette
    Hand made Mini Crab cakes

  • Fried Shrimp
    Butterflied, fried shrimp

  • Mini Monte Cristo
    French Toasted Turkey, Ham and Swiss Cheese


 


STATION STYLE COLD HORS D'OEUVRES (Standard)


Fine Imported and Domestic Cheeses along with Garden Fresh Vegetables Crudite with dips and Fresh Fruit


Caviar station with Sevruga and Salmon Roe Caviar


Fresh Bruschetta on toasted Italian bread


Fresh Bufalino Mozzarella Cheese with plum tomatoes and fresh basil over Italian bread


Various Canapés and chilled Spinach in Croute, carved bread bowl presentation


 


STATION STYLE HOT HORS D'OEUVRES  (ATTENDED BY A CHEF)


Pasta with choice of a sauce
Penne pasta with your choice of a Vodka, Pomodoro, Bolognese, Florentine or Alfredo sauce.


Paella
Spanish Rice with tomatoes, shellfish, chicken and chorizo sausage


Martini Mashed Potato Bar

We had the following passed hors d'ourvres during our cocktail hour:



  • Bited sized brie en croute

  • Crab Cakes

  • Mini shrimp skewers

  • Gorgonzola, garlic, and fresh herb crostini

  • Goat cheese filled roasted red peppers

  • Boneless chicken lollipops

  • Pesto chicken bruschetta

  • Mushroom cups filled with Italian sausage

We're having an assortment of passed hors d'ourvres:


  • Gourmet Meat Balls

  • Assorted Quiches

  • Puff Pastry Assortments/Feta cheese, spinach, asparagus, Italian sauces, Ricott & Chives, Mushroom

  • Chicken taquitos

  • Beef frank wrapped in puff pastries

  • and this palm tree of cheeses and stuff

    We don't know yet! Hopefully we're going for our tasting on Jan. 22 (this is for our April reception).  For the DW our cocktail hour is pretty much all the time (because it's all inclusive) but I'm thinking I might want to look into having some things plated before dinner.

    *** if this is a lesson in how much we obsess during planning and then pooof - it's all gone, i honestly, i cannot remember all the food we had!!!  LOL!!!  i do remember i ate some meatballs, some kind of chicken, stuffed mushrooms, maybe we had eggrolls too??

    We had our Signature Drink "Spiral Hill" ready for our guests to enjoy & set up on the Bar when they entered the Cocktail Room:

    We also had the following white glove service tray passed hors d'oeuvres for our guests to enjoy: 



    Arancini Bolognese  Crispy Arborio Rice Balls prepared with our Homemade Bolognese and Fresh Mozzarella with Arrabiata



    Traditional Bruschetta  Marinated Vine Ripened Tomatoes over a Toasted Crostini


    Pan Plano Mediterraneo & Assorted Pizzas Our Thin Flat Bread, Baked in our Wood Burning Oven, Topped with Marinated Tomatoes, Olives, Caper Berries, Pesto, Ricotta Cheese and Arugula, Marguerita Pizzas, etc.



    Crab Frittella  Lump Crab Cakes with a Warm Bean Salad and Salsa Mostaza

    We had Passed Hot Hors D'Oeuvres.... I believe we had spring rolls, bacon wrapped scallops, crab cakes, chicken satays, spinach in phyllo pastry... and something else I can't remember at the moment.
