do you want it to be thanksgiving-ish? (pumpkin/sweetpotato/spice flavored) or can it be anything?

My go-to for things like this is always Caramel Chai bars...

1 roll of sugar cookie dough

1 packet of chai tea latte mix (make sure you get the powder kind, they come in a package with like 10 envelopes)

1 cup caramel sundae topping (I've used butterscotch before too, yum! But it's really sweet)

2 tbs flour

Heat oven to 350. Mix the chai powder in with the dough. Smush about 3/4 of the dough into an ungreased square baking dish. Bake for about 13 minutes or until dough is golden brown.

Mix syrup and flour. Drizzle over baked dough when it is ready. Crumble the remaining 1/4 dough randonly over the caramel. Bake another 22 minutes or until the top is golden brown and firm to the touch and caramel is bubbly. Cool about an hour and cut into bars.

Super easy and sooooooo good!

You can NEVER go wrong with a sweet potatoe pie unless you don't like sweet potatoe pie! I have a great recipe for a cake that you can add nutmeg, vanilla and very finely chopped walnuts. I made it for Cale a couple of weeks ago and he loved it!

ok Ashley I have two that are really easy and taste soooooo good.

the first is called dump cake. (this works good with all kinds of fruits too like pineapple w/ cherries or peaches or berries or you get the idea)

1 can Libby's pumpkin pie filling
2 eggs
3/4 c. sugar
2 tsp. pumpkin pie spice OR 1 tsp. cinnamon, 1/2 tsp. nutmeg, 1/2 tsp. cloves
1 can (1 1/2 c.) evaporated milk
1 box yellow cake mix
1 stick butter, melted

Make pumpkin pie filling according to directions on the can of Libby's pumpkin. Pour batter into greased 9 x 13 inch pan. Top with package of yellow cake mix. Melt butter and pour over dry cake mix. Bake 1 hour at 350 degrees. Serve plain or topped with whipped cream.

the second one is from the Keebler Elves

  • 4 ounces cream cheese, softened

  • 1 tablespoon milk

  • 1 tablespoon sugar

  • 1 1/2 cups frozen non-dairy whipped topping, thawed

  • 1 Keebler® Ready Crust® Graham Pie Crust

  • 3/4 cup cold milk

  • 2 packages (4-serving size) vanilla flavor instant pudding & pie filling

  • 2 teaspoons pumpkin pie spice*

  • 1 can (15 oz.) pumpkin

Directions

1. In medium bowl whisk together cream cheese, 1 tablespoon milk and sugar. Gently stir in whipped topping. Carefully spread in crust.

2. In large bowl beat 3/4 cup milk, pudding mix and spice with wire whisk for 1 minute. Whisk in pumpkin. (Mixture will be thick.) Carefully spread over cream cheese layer.

3. Refrigerate at least 4 hours or until set.

4. Garnish as desired. Store in refrigerator.

*NOTE: May substitute 1 teaspoon ground cinnamon, 1/2 teaspoon ground ginger and 1/4 teaspoon ground cloves in place of pumpkin pie spice.

I have a recipe for a harvest apple pound cake that is to die for, but it's handwritten in my recipe book at home - I'll have to look for it when I'm finished work.

I do have my recipe for pumpkin bars with cream cheese frosting saved here at work... because once I made them for a department meeting, over half a dozen people asked for the recipe! They were gone within minutes :)

Pumpkin Bars

2 c. flour

2 c. sugar

4 eggs

3/4 c. oil

16 oz. canned pumpkin

3/4 tsp. salt

1/4 tsp. cloves

2 tsp. baking soda

2 tsp. cinnamon

chopped walnuts or pecans (optional)

Combine all ingredients in large bowl. Mix well with mixer. Pour into
greased 11 x 15 inch pan. Bake at 350 degrees Fahrenheit about 25 minutes, or
until a toothpick inserted in the center comes out clean. Let cool completely
and frost with cream cheese frosting. Dust with cinnamon to pretty them up ;)

Cream Cheese Frosting

8 oz cream cheese, softened

3 tbsp. butter, softened

5 c. powdered sugar

1 1/2 tsp. vanilla

Cream butter and cream cheese together until mixed well. Add powdered sugar
one cup at a time. Add vanilla. Spread on top of cooled pumpkin bars.

HTH!
