What are you cooking for dinner?

Haooy Sunday ladies! What are you cooking for dinner? My roast is in the oven, making cabbage and my delicious smothered potatoes, corn bread and my fresh brewed ice tea. I may bake some cookies for hubby although he supposed to be watching his figure!

We made a nice dinner last night for some friends -tri tip, homemade mac and cheese, and veggies - we will probably have leftovers tonight!!!

think of it as a vegetarian burger here is a recipe but I have made several variations of this basic. You can use any kind of canned beans you like black beans, kidney, pinto, white, garbanzo they all will work well with this. Also you can put anything in there like grated carrotts, or zuchnni, etc. I have made this asian, and barbq by just changing a few ingredients. You can use bread crumbs or cracker crumbs. Also, i freeze them on a cookie sheet for about 20 to 30 minutes before ccoking them otherwise they can be a bit soft. If don't want to be completely meatless you can add a pound of chicken or turkey to the mix. they freeze well for a "busy night" meal. A few add ins green onions,green chilis, terryaki sauce, barbq sauce, taco seasoning, etc....one more tip I mx this in a food processor.


 


ne (15- to 16-ounce) can black beans, rinsed and drained


1/2 cup finely crushed cereal

1/3 cup finely chopped red onion

3 tbsp picante sauce

1 tsp ground cumin

1/2 tsp salt

4 hamburger buns

Salsa, guacamole, sliced avocado, sour cream, sliced ripe olives, sprouts

 


Preparation


1. Mash the beans with a potato masher in a medium bowl. Stir in the cereal, onion, picante sauce, cumin, and salt. Shape into 4 (3/4-inch-thick) patties.

2. Place the patties on a greased baking sheet; broil 4 to 5 inches from the heat source for 3 to 4 minutes on each side, or until lightly browned. Serve in the warmed buns with the desired toppings.
