Any good POT ROAST recipes?

Hey ladies,


the weather is definitely started to cool and am thinking a good pot roast would be perfect to warm up the hubby. Are there any good/great/perfect pot roast recipes out there? How about in a crock pot?

FI has been asking for this too.  To be honest, I usually just buy those kits where I just drop it in... :/

I don't use a recipe, but here's what I do:


Put a liner in the slow cooker to make the cleanup easier.  Season the roast (salt, pepper, garlic, whatever you want).  Pour a packet of dry onion soup mix over the roast.  Add enough beef broth/stock to completely cover the roast.  Cook on high for 4-5 hrs, then turn slow cooker to low.  Peel carrots, potatoes, and onions (if you want) and cut into large chunks.  Add to slow cooker and cook on low for about 2 hrs.


If you're putting this in to cook while you're at work, you can cook it on low for 8 or so hrs, then add veggies and cook on high for 1 hr once you get home.

Thanks Laura! I work 10 hour days. So let's say I cook it on low for 10 hours and when I get home I'll cheat by boiling the carrots and potatoes for a few minutes and then throw them in the pot and cook on high for 30 minutes. Will that work?


Also, have any of you ladies heard of adding white wine in the mix?

Heres what I do....


Cut slits in the roast in various spots. Insert garlic cloves into the slits. Rub the outside of the roast with black pepper a little salt, onion powder (whatever is in your spice rack that looks good, lol)


Heat up an iron skillet with some oil sear the roast on all sides put in the crock pot. Add baby red potatoes halfed, an onion or two, quartered, and baby carrots. Layer it potatoes, carrots onion... then pour equal parts red wine and beefstock over the whole thing cook on low while your at work...Yum!
