Beer Butt chicken:


One can of beer (your choice)


4 gloves of garlic


S/P


Open can put in holder, sprinkle garlic cloves around base of beer can or on top of can. Coat chicken with some EVOO and S/P. PLace on chicken holder BBQ 350degrees for 45mins (I think:)

Here's one of our favourite barbecue sauces. 



Basil-Balsamic Barbecue Sauce 


(makes 1 cup... we usually make about 5 at a time!)


1 cup balsamic vingear
3/4 cup ketchup
1/3 cup brown sugar
2 cloves garlic, finely chopped
1 tablespoon fresh basil, finely chopped
1 tablespoon Worcestershire sauce
1 tablespoon dijon mustard
1 teaspoon orange zest, finely chopped
1/2 teaspoon salt
1/2 teaspoon pepper

I wish! I cant light a grill and dh over or undercooks evvvvvverything, which drives me nuts!

Yummy that recipe sounds great!  Do you have to cook it on the stove for a bit then let cool? Or just use once made?


Jess we have a BBQ with one of those pushbutton igniters:) Oh and I burn the chicken so often that when I don't we get excited, crispy we call it...lol

It's good either way but I usually let it cook down until it thickens a bit, then let it cool since DF's nuts for thicker sauces.  It's seriously yummy and surprisingly good on fish (especially mahi mahi or swordfish).

^^thanks! I'm going to cook this maybe tomorrow although I'm pretty sure I won't be able to find fresh basil. Yes I know thats crazy but I live in a tiny town that is lacking in certain fresh produce and herbs.....bah!

Beer can chicken is one of our favourites, I see danidabi likes it too! ;)


We also do inside-out bacon cheeseburgers, but only once in a while, they aren't very healthy! lol


Heat BBQ to medium. Mix 1 lb groundbeef (I use extra-lean) and 2 Tbsp ranch dressing; shape into 8 thin patties. Mix 1 Tbsp ranch dressing and 1/4 cup bacon bits. Spoon onto centres of 4 patties. Top each with 2 quarters of cheese slices and second patty; pinch edges together to seal. Grill 7 to 9 min. on each side or until done. Top with lettuce, onion, tomato & pickles.

I hope you like it, danidabi!  :)  


Our other favourite thing for the grill is stuffed bison burgers.  Our CostCo has a really good price on all-natural ground bison... we usually stuff the patties with a little bit of blue cheese and spinach wilted with garlic (we've got to precook the spinach since we both like our burgers seriously rare).  Really, really good!

Sauce was amazing! I didn't have an orange and used lemon zest and DH loved it! Lots left in the fridge for more BBQing:)
