camping meals?

we are going camping next weeked, yuck! lol. I need ideas tho.


Breakfast: granola with yogurt and blueberries


lunch: orzo salad and lousianna sausage hot dogs


dinner?!


one option: foil individulas with pork chops, chopped onions, chopped bell peppers, pineapple and teriyaki.


option 2: bring some chicken and marinade it a few hours before grillin time


I've already premade and froze pasta shells to pop in the freezer sunday night when we return home.

we just came back from camping this past weekend, 2 nites/3days! ur menu sounds great btw!


the veggie foil packs were a hit for dinner! - we used red potatoes, asparagus, bell peppers and mushrooms all tossed in EVOO and salt/pepper. grilled corn on a cob was another veggie. we also brought salad veggies (mixed greens/carrots/english cucumber) so some people did steak and/or shrimp salad with hawaiian papaya seed dressing!


our meats (dinner): NITE 1 = grilled steaks (just threw some rub/seasoning on it before throwing it on the grill) + grilled seasoned shrimp on skewers (still in shell); NITE 2 = hawaiian shoyu chicken (pre-marinated) on the grill


lunch: simple burgers and hotdogs/sausages - got almost too hot to eat in the middle of the day actually...


breakfast - eggs and kiebalsa sausages + assortment of fruits (grapes, mangoes, apples, tangerines, WATERMELON!!! we had three watermelons among the 16 of us!)


desserts/snacks - smores of course (try the netella in place of chocolate - suggested by another friend, spreads onto the graham cracker so much better!), chocolate chip cookies (homemade of course), chips and salsa. and i fell in love with POP CHIPS this weekend...

how about carne asada tacos? just take tortillas and grill the steak, chop it up and voila. we usually buy the pre-marinated carne asada meat from like a local mexican grocery or meat shop. DELISH.


re: popchips, i had the bbq kind once and couldnt finish my bag. it was way too salty! i'm afraid to try the other flavors.

38- your menu sounds good too! I actually like your veggies packets better lol, so I'm gonna steal them ;) So friday night will be lemon oregano marinated chicken with the veggies. I try to keep Dh away from snacks, I'm trying to help him loose weight, which is really just turnin me into a nag, but it's working...lol.


wm-that actually sounds really good. but waht about rice and beans?! Would I preshred the cheese, lettuce, tomatoes, guac, etc? I just might have to look up a mexican groccery!

u can take canned beans and make the rice there. all i do is add tomato sauce instead of some water. or you can just make a salad instead. or even corn on the cob flame grilled and made mexican style (rub mayo or butter and sprinkle with parm cheese and chili powder and squeeze lime on it)! yummo!. and yes, preshred the toppings. :)

We went camping last month and made pancakes and bacon for breakfast, not as healthy as your plan, but it was yummy. Sandwiches for lunch, and chicken with pasta salad a prepared ahead of time. Not real original but it worked.

yup, those are it - not fried, not baked...just heated under high pressure and "POP" it's a Pop Chip (or something like that...it says it on the back of the bag). supposed to be healthier...


finished the bbq flavor...


have a sour cream/onion one in the pantry - trying to decide when to eat that one... :P

They handed out those pop chips at my gym the other day. I had the bbq ones and they were SO good. Where do you buy those, regular grocery stores or like a Trader Joes?

I love making campfire pizza sandwiches but you need the little panini fire tool.  We go camping every year in a big group to a rustic site (no electricity or running water) and it's a tradition to have pizza sandwiches and huevos rancheros and big ol stew that cooks all day
