Casseroles

For some reason I have been in a casserole mood lately...I think it is the cold weather and the appeal of just one dish. What are some good casserole recipes that you like??

My favorite casserole dish is Chicken Divan. 


2 (10 oz.) packages frozen chopped broccoli florets


2 cooked boneless skinless chicken breast halves, chopped


1 10.75 oz. can condensed cream of chicken soup


1 10.75 oz. can condensed cream of mushroom soup


1/2 cup mayonnaise


1 teaspoon lemon juice


1 1/2 cups shredded cheddar cheese 


2 tablespoons bread crumbs


 


Preheat oven to 350 degrees


Place broccoli in the bottom of a 9X13 baking dish.  Top with the chicken.  In a bowl mix the two soups, mayonnaise and lemon juice.  Pour the mixture over the chicken and broccoli. Spread the cheese on top. Sprinkle the bread crumbs on top.  Bake for 15 minutes or until bubly and lightly brown.

Here's a link to a reciepe for the tator tot casserole.. It's sooo good there are couple different ways to make it, this one is just a basic quick and easy way.

@alisonandjake-here is my receipt


Total Time: 30 minutes

Ingredients:


  • 1 pound ground beef

  • 1 16-ounce bag tater tots

  • 1 can cream of mushroom soup

  • a splash of milk

  • 1 can of green beans

  • 1.5 cups of shredded cheddar cheese


Preparation:

Brown the ground beef in a skillet and drain. Mix beef with 1 cup of cheese, milk, green beans, cream of mushroom soup, and place in a casserole dish. Place tater tots over meat mixture. Bake for 20 minutes or until tots are crunchy. During the last 5 minutes sprinkle the remaining cheese on top.

*I like to add a little bit of pepper jack into mine for a little extra kick. I also like to add a tablespoon of sour cream if I have some on hand.

I love tater or tot casserole and dh doesn't like it so I get to enjoy the whole batch. I hope you liked it. I will finally be able to unpack all of my cookbooks so I'll see if I can find a few other ones that you might like.

Traditional Scottish stovies for me!!


Ground mince


Beef stock cubes + beef gravy granules to thicken


Carrots


Turnip


Potatoes


Peas


Onion + garlic


Seal meat in a pan with garlic and onion


Crumble in your beef stock cubes and just cover your meat with boiling water. Add your vegetables all cut the shape you want (diced is nice) and cover the pan. Simmer on low for approx 1 hour until everything is tender. Thicken up your gravy with granules or cornflower to taste.


Serve this as a fork-food dish with a large slice of floury white bread for true Scottish style!!
