I love to at least try to do a new recipe once a week, but some of those ingredients aren't cheap.  If I'm too lazy (or broke) to go all out, I still to cheap staples like spaghetti, cheeseburgers, chili and arroz con pollo.  All crowd pleasers, all easy.

Quesadillas

Place 1 soft tortilla in fry pan

Top with cheese and fillings of your choice (we use different combos of leftover chicken or steak, tomatoes ,olives, onion  etc )  place a soft tortilla on top of fillings let brown on bottom and then flip and brown the other side (doesn't take long so watch you dont burn the tortillas)

You could also just use cheese as a filling

serve with sour cream and salsa , (guacamole is good too )
