Chicken & Spinach Whole Wheat Baked ziti

Hey gals! I invented a recipe by modifying a ziti recipe i had and i thought i'd share. here it goes:




  • 1 box whole wheat Ziti or Rigatoni noodles

  • 1.5 jars of pasta sauce (one jar is ok i like to use 1.5)(or your own recipe)

  • 1 Ricotta Cheese (16 oz)

  • italian herb seasoning or fresh basil 

  • 1 cup shredded Mozzarella Cheese

  • 1/4 cup Parmesan cheese

  • 2 cups of spinach chopped teeny tiny (i use our hand blender)

  • package of ground chicken breast

  • half large onion diced

  • three cloves of garlic diced


Preparation:

Cook ziti according to directions. Set aside.

Mix Ricotta, mozarella, and parm cheeses with some chopped fresh basil or dried italian seasoning. Set aside.

Sautee onion and garlic for a bit. Add chicken, (season it with salt and italian seasoning). Add in spinach. Cook for five minutes on low. Add sauce. Stir and simmer well for another 10 - 15 minutes on medium to low he at. Turn off stove. Mix ziti and sauce mixture together. Layer half of that into a rectangle glass pan. I use a Pyrex casserole dish. Spread cheese mixture over the ziti/sauce mixture (like you would a lasagna). Then layer the rest of the ziti on top of cheese mixture. Then sprinkle generously with shredded mozarella and a bit of parm cheese.  Bake in 350° oven for 45 minutes. Sprinkle with Parmesan cheese, serve.

 PS. I use whole milk ricotta. Cheese is the only thing i hardly get low fat or non fat on. I just can't its not the same! But in this case i did use part skim shredded moz cheese.
