Cooking Light's feature mag out now
I don't know how long it'll be on newsstands, but it's a 5-ingredient, 15 minute cookbook, in magazine form. It's like $12 but full of YUMMY recipes. I would post the cover, but I can't find an image :(
I tried one the other night that was a huge hit at girls' night:
Tomato Avocado salad (or something like that)
Dressing - combine 2 tbsp red wine vinegar, 1 tbsp EVOO, 1 tbsp fresh chopped oregano, and 1 clove minced garlic in a large bowl.
Add 2 cups halved grape tomatoes, 1 whole diced avocado, and 1/2 cup reduced-fat feta.
Toss it all together :) SO good!
