Crock pot recipes!!

So I have been in pinterest heaven today! I stumbled upon some crockpot freezer recipes, which are perfect for those lazy "I don't know what to make for dinner days". Enjoy!


 


Healthy Mama Barbecue Chicken
3 medium unpeeled  sweet potatoes, cut into 1/2 inch pieces
2 large green pepper, cut into strips
1 large red pepper, cut into strips
1 zucchini, chopped
1 medium onion, sliced
1 tablespoon quick cooking tapioca
2 pounds chicken thighs or drumsticks
1 8-ounce can of tomato sauce
2 tablespoons packed brown sugar
1 tablespoons Worcestershire sauce
1 tablespoon yellow mustard (I wasn't sure if this meant actual mustard or the spice so I did a little of both)
1 clove garlic, minced
1/4 teaspoon salt


Dump everything into two gallon freezer bags, shake it up, seal, label and put in the freezer.


Stephanie's Goulash
3 cups chopped onions
2.5 cups coarsely chopped green sweet peppers
4 large beets, peeled and diced
2 cups of carrots
3 cloves garlic, minced
3 pounds beef stew meat, cut into one inch cubes
1 6-ounce can tomato paste
4 teaspoons Hungarian paprika or regular paprika (I used regular)
1/4 teaspoon ground black pepper
4 cups hot cooked noodles
1/2 dairy sour cream


Dump everything into two gallon freezer bags, shake it up, seal, label and put in the freezer. EXCEPT the sour cream, that is for garnish after the meal is cooked.


Chicken Curry
3 tablespoons all-purpose flour
4 tablespoons curry powder
1.5 teaspoons ground cumin
1.5 pounds chicken thighs, cut into 1 inch pieces
2 cups chopped peeled sweet potatoes
2.5 cups baby carrots
2 cup coarsely chopped mango
1 cup chopped onion
1 zucchini chopped 
2 cloves garlic, minced
chicken bouillon
.5 cup raisins (for garnish)
.5 cup peanuts or cashews (for garnish)


Dump everything into two gallon freezer bags, shake it up, seal, label and put in the freezer.


To cook, take out of freezer and set on counter for about 30 minutes, then dump contents of bag into slow cooker. Cook on high for 4 hours, or low for 8 hours.

Thanks for these. I only really use mine for pot-roast, casseroles & pulled pork, it will be nice to try something different!

I made chicken and rice the other day in the crock pot.


 


chicken thighs, legs and breast, chicken broth, stewed tomatoes, frozen peas, pimentos, turmeric, and yellow rice with saffron.


 


Placed everything in the pot- all uncooked, set on high for 5 hours, kept on low for another hour or so (because DH was taking longer than expected) and omg....better than what I get in Spanish restaurants!

Bumping since it is now officially Crockpot weather for me.  I need to gather as many recipes as possible.  I am also looking for inexpensive healthy ideas too.  : )

I use my crockpot for Stew and Chilly


STEW


Stew is easy dredge meat in seasoned flour Brown it in skillet with a little olive oil and then throw into stock in crockpot and add whatever veggies you like.


Stock is 4 cups liquid with seasoning. I use Herbs de Provence Fresh cracked pepper 4 whole Onions 2 garlic cloves minced Sage Parsley Time and Rosemary 2 Teaspoons Sea Salt


to thinken stew i add 4 tablespoon flour to 3/4 cup cold broth wish and add to COLD broth before putting in crockpot if it is not thick enough after it is done cooking repeat and cook for half hour more to remove the flavor. You can also use Corn startch and follow its directions.


Hot Italian Sausage Chilly


Cut sausage into 1/4" round disks


Brown sausage in a little olive oil


Once browned throw into crockpot with


1 Jar your favorite spagetti sauce


1 can diced tomatoes


2 cans stewed tomatoes


1 large can or 2 small cans tomato paste


2 Tablespoons chilly powder


1 tbspoon Cumin to start with


1 tablespoon Paprika


1 to 2 cans of either Red, dark red or Black kidney beans RINSED till the water runs clear.


Cook in crockpot min 4 hours


Taste to see if you want it hotter or need more cumin. I tend to add alot more when it is just me and hubby, but if I have the kids and or guests then I keep it light.

my fav crockpot recipe: (i call this kellys crock pot chicken haha. oh so origional, i know!) 


1.5lbs chicken breast, cubed
.5 tsp salt
.5 tsp black pepper
.5 tsp paprika
1 can (10.75oz) cream of mushroom soup
(2) 4oz cans sliced mushrooms- drained, set "juice" aside
1/2 cup dry white wine, chicken broth, or mushroom juice (from cans)
8oz sour cream
4 Tbsp cornstarch 


cube chicken and put in crock pot sprinkling with salt, pepper, and paprika. add soup, mushrooms, and liquid (i just use what i drained from the cans of mushrooms) and mix well together. cook on HIGH for 2-3 hrs,  in last 30 minues, add sourcream and corn starch, stir and continue to cook on warm. serve over pasta of choice (we think its best with bow-tie pasta or egg noodles)

Overnight Mexican Roast


1 chuck roast


1 potato, finely diced


1 packet of taco seasoning


1 small can of chopped green chiles


1 medium jar of picante sauce


Tortillas


Grated cheese


 


Before you go to bed, place roast in crockpot.  Cover with taco seasoning, green chiles, picante sauce, and potato.  Set the crockpot on high and cook it overnight.  The next morning stir it with a fork to mix the meat mixture.  Set the crockpot on low and cook until it's time for dinner.  Shred it before serving, then fill a tortilla with meat and add cheese.  It's delicious, fragrant, and FILLING!  The leftovers are even better.
