Cutting ONIONS, whats the secret?

What's the secret ladies?  I use onions in just about everything and I'm so tired of burning, watery eyes!!!  I've tried those choppy things, but I haven't found one that works really well and doesn't break after a few uses.  Please share!

I saw one of the Food Network chefs one time say that if you stick the onion in the freezer for 30 minutes before you cut it, it won't make you cry.  Something about it is supposed to keep the vapors from releasing from it like normal.  I haven't tried it, though.

I think I read before that if you chew gum while you cut them it wont hurt. Ive never tried it though.

nothing works for me....DH does most of the cooking anyway....but even still, sometimes it bothers me....even in the other room!

Tips:


Freezing onion first


Using sharp knife


Lighting a candle and keeping it near the cutting place


sticking your tongue out while cutting so the enzymes from the onion are attracted to your mouth instead of eyes


cut it near the oven's fan


chew gum


breathe through mouth only


wear goggles or mask

I used to work for a restaurant and I felt so bad for the prep cook that had to slice 50 ONIONS every morning!!! He would just cry and cry the entire time....I had him try the gum trick and it totally worked for him!!! He was so thankful for that....can you imagine having to slice 50 onions every morning?! Pure torture!!!

I wear contacts - that seems to help!


I've heard that if you use an extra sharp knife to cut the onion the scent won't get to you.

I cut them under scalding hot water and they don't lose flavor but my eyes are a mess either.  I really should be doing either because I'm horribly allergic to them!

I don't really think there is one.  I once read a book called "the sharper your knife, the less you cry" about a woman who went to Le Cordon Bleu and that was the "secret" that the chef told her.  No way to NOT cry, but you'll supposedly cry less if your knife is sharp.

I've heard a couple of things....


first... cut near running cold water.  The other is do no cut close to the root.  most of the fumes that make your eyes burn is in that part.    Both seems to work for me  I do the first one more often... and never have any problems.

Slice the top off of the onion and rinse it in cold, running water before you cut the rest. It washes away the "milk" of the onion, and lets you cut tear free. I do this every time I cut onions, and it works like a charm!

I wear goggles :) But I do find that super cold (not quite frozen) onions are less offensive to my eyes.

I wear swimming goggles hee hee!! Or run them under water first. The molecules move down a concentration gradient (from hi onion molecule conc. to a low onion molecule conc.) - i.e from around the onion (where there's a hi conc of onion mols) to up around your face (lo conc). So anything that creates a barrier between those 2 areas will do the trick!!

Actually, my contacts help a lot. Which makes sense, I guess.


But here is my best advice: Give yourself a small cut, cry loudly. If you are as lucky as me, DH/Fi will forbid you to touch a knife again and chop them from now on. :D

seriously though, i'm making couscous for our "girls dinner" tonight, and i had him cut the onion last nite and put it in a baggie for me in the fridge!!  (he's going out of town tonight, or he'd just do it for me at the time of cooking)
