This was my dinner tonight. Grilled pita with fresh hummus, arugula salad with grilled portabella mushrooms and corn. Yummm.
The corn, pitas, and mushrooms are just grilled in a pan coated with olive oil and garlic powder, with a squeeze of lemon juice.
2 cans garbonzo beans
1/3 cup lemon juice (or the juice of one lemon)
1 Tbs olive oil
1 Tbs sundried tomatoes (packed in olive oil)
garlic to taste
Put all ingredients in blender or food processor; blend.
