easy chicken casserole

Probably not the healthiest or fancy schmanciest but nevertheless quick and easy and relatively cheap.  Just wanted to share bc this really did the trick for DH and I after we came home from our trip to Australia.  The markets and restaurants were closed by the time we got home so I had to whip up something quick and easy but our fridge was practically empty.  So I grabs these items from the pantry and the freezer...


  


1 package of egg noodles, medium sized


2 cans of cream of mushroom


1 can of cream of chicken (or if veggies, use 3 cans of cream of mushrooms)


1 can of mushroom stems and pieces


1 bag of frozen broccoli


Breadcrumbs or crushed potato chips or crushed ritz crackers


 


Preheat oven to 375 degrees


Boil noodles per instructions on package, estimate time 8 mins


In the meantime, defrost broccoli in the microwave or boil


Drain noodles and place in a baking dish


Add all the canned ingredients and the broccoli to the noodles and mix


Top with breadcrumbs/potato chips/crackers


Bake for 20 mins or when dish is slightly bubbling and the breadcrumbs are toasted


 


 


Tailor it to suit your taste-


 


Have shredded cheddar in the fridge? Add that to the mixture


 


Got an extra 10 minutes?  Chop an onion, sauté and add to the mixture


 


Got another extra 15 minutes? Saute fresh mushrooms with the onions and/or use fresh broccoli


 


Want a meatier dish? Add pieces from a rotisserie chicken or mince a chicken breast and sauce with the onions


 


Healthier options?  Try yolk free egg noodles, 98% fat free cream of mushroom/chicken


 


Vegetarian?  Nix the cream of chicken and use three cans of cream of mushrooms


 


Pescatarian? Use a can of tuna (haven’t tried this but I imagine it could work)
