Entertaining for the FIRST TIME!

Ok--what the heck do I cook?


I want it to be "impressive" as I am a capable cook--but don't want it to be too challenging!


Any ideas?

I cook Ribs when I have friend over it a bite expensive but so worth it.

We love cooking up chicken thighs with some sort of roasted potato and veggie.
So delish if you let them marinate in a mix of bbq and teryaki sauce!

I did a baked pasta and salad for my first dinner party. It was so easy b/c you can make it ahead of time and make something really delicious. I hope that helps!

I think my favorite "company" meals are 


Angel Hair Pasta with Grilled Scallops (it's from Rachael Ray's 365 Days cookbook) with plenty of bread and wine.


or


Green Enchiladas with rice, beans and a salad.

I usually make baked ziti or some form of that. But one time I made just a simple roast pork with roasted veggies. I cut it all up on a platter and put the vegetables around it...people were so impressed with it! Haha, it's all about presentation! And who doesn't love a roast pork in the fall!

I have a wonderful choc cake recipe  that is very ez make it the day before and frost it the day of.


3 c. flour
2 c. granulated sugar
2 tsp. baking soda
1 tsp. salt
1 c. cocoa (dark cocoa powder Is wonderful)
2/3 c. veg oil
2 tsp. vanilla
2 tsp. vinegar
2 cups boiling water


Put in mixing bowl in order given, but do not mix. Pour 2 cups boiling water over all ingredients. Mix on med about 2 minutes. Put in greased and floured round (8 in) cake pan and bake at 325 degrees for 30-45 minutes or untill fork comes clean.
 makes two  8 inch cakes

Frosting
1/2 cup butter, softened (1 stick) add 1 pinch of salt if using unsalted butter
3 cups powdered sugar or confectioner's sugar
3/4 cup unsweetened cocoa powder
1 teaspoon vanilla extract
About 1/3 cup heavy whipping cream


whip butter until very fluffy. While beating slowly add one at a time in order vanilla, powdered sugar, coaco powder,whipping cream.  Fluff as much as possible.

i like to mix it up - i like to do either:


-all appetizer meal where you just sit around and gab (most popular for having the girls over)


-my dh is a mega-grill master so i we will smoke a peice of beef or pork and slice it up for hot beef sandwiches w/ some generic sides


-i will make a batch of chili and everyone can add their own toppings


mostly homey cozy food - i think people just like a break from cooking for themselves!!!

Risotto can be a slight challenge but it've very tasty and impressive.  That's what I usually serve when we have a small dinner party.
