Good, healthy soup recipe!
With the weather getting cooler, I've been wanting to make soups for dinner. I made this Chicken Corn Chowder from Cooking Light tonight and it was REALLY good!
I did doctor it up a little bit because after reading the recipe I thought it might be a little bland. Things I did differently:
* Added a minced clove of garlic and a minced, seeded jalapeno pepper when sauteing the green onion in the beginning.
* Added a dash or two of cayenne pepper towards the end of the soup simmering.
* Used pepper jack cheese on top instead of cheddar.
Normally I would have used a rotisserie chicken from the grocery store if I made this on a week night to cut down on cooking time but since it was Sunday, I roasted two breasts in the oven at 400 degrees for 30 minutes with just a little olive oil, salt, and pepper and then shredded them after they were cool.
