Good no bake cheesecake?

Does anyone have a good recipe for a no bake cheesecake? MIL's birthday party is this Saturday but I'm busy Friday night so I figured it might be easier/quicker to do a no bake version? I've seen pics of some individual sizes in little cupcake paper liners? I would search now, but the work comp is blocking me from recipe sites

i think betty crocker makes a no bake oreo cheesecake. everything is in the box to make it except cream cheese i think.

for some reason I hate oreos. I think I'm in a very low % of the US population on that one, lol. But thanks for responding. I'm sure most ppl would love that

There's one you can buy from walmart...check in the bakery section. There's one that comes in a can and another that is a powder mix. They are both really good. I can't tell you much other than that, sorry. It's been a while since I've made one.

i just found a recipe on martha stewart for you. it has to be good if it is from her!


7 ounces chocolate wafer cookies



  • 1/3 cup plus 3 tablespoons sugar

  • 6 to 8 tablespoons unsalted butter, melted

  • 1 packet cream cheese (8-ounces)

  • 2 tablespoons freshly squeezed lemon juice

  • 1/4 cup heavy cream

  • 1 pint fresh raspberries



Directions



  1. Place cookies in a food processor; process until finely ground. Combine cookies and 3 tablespoons sugar in a bowl. Add 6 tablespoons butter, and mix well until crumb mixture holds together. If needed, add remaining 2 tablespoons butter. Transfer cookie mixture to a 6-inch springform pan, and pat out evenly to make the crust, lining sides of pan only about 3/4 of the way up. Place in freezer while proceeding.

  2. Combine cream cheese, lemon juice, and remaining 1/3 cup sugar in a mixer, and beat until combined. Lightly whip cream to soft peaks, and fold into cream-cheese filling. Remove crust from freezer, and pour filling evenly into pan. Cover with plastic wrap, place in freezer for 30 minutes, then transfer to refrigerator until firm, at least 30 minutes, or up to 24 hours.

  3. To serve, pass half the raspberries through a fine strainer to puree. Serve slices of the cake with whole raspberries and puree.

i ve used this photo 833139-1


i've used this ready made cheesecake filling to save time. you just have to make the crust or you can buy the ready made crust too. to make it special, you can mix flavorings into it. i mixed fresh mint and fresh lime juice into the filling and made mini "mojito" cheesecakes.

oh man jami-I saw that cheesecake filling last night in the grocery store but I told myself no. I was shopping while hungry so I knew if I bought it I would have opened it up and started eating a enormous amount of it right out of the tub!


I decided to re-try my recipe for the minicheese cakes this weekend instead of going the no-bake route. I'm determined to perfect it so that the crusts stays on better = )
