need healthy recipe ideas for BBQ/Picnic!


every summer, DH and i put together a BBQ/picnic at our favorite park on my birthday. we usually go all out because we love to cook, but this year i want to make sure i have some healthy items on the menu.


so far, we have the standard items for the grill - burgers and hot dogs. we're also planning to do some skirt steaks and as well as some small salmon filets in foil packets. DH is also thinking about doing ribs.


does anyone have any good chicken recipes for the grill? preferably using boneless chicken breast to make things easier?


as for salads, i usually do a black bean salad (black beans, corn, tomatoes, red onion, avocado, lime juice and cilantro), a simple pasta salad and a potato salad. i might skip the potato salad this year because i would like to try a new/different salad recipe. 


does anyone have any good salad recipes that are good to bring to a picnic?


or suggestions for grilled veggies?

I love marinating veggies - like peppers, mushrooms...um.......that's about it.


I also throw a few slices of zucchini on the grill too - coated in EVOO, salt and pepper..it's super simple but pretty darn tasty!


As far as chicken recipes go - I'd stick w/something simple like chicken skewers. I'm a HUGE fan of marinating...so try a souvlaki marinade...or how about teriyaki chicken? or even a tandoori chicken for the adventurous type?


I would most definitely avoid hot dogs if you're trying to make things a bit healthier though..hot dogs are not very good (in terms of fat content and sodium). HTH!

Regarding chicken, is dark meat ok?  Boneless thighs would be as convenient and much less likely to be overcooked and dried out on the grill.

ooh tandoori chicken kebabs sound yummy! i'll look into that one. true, boneless thighs might be a good idea. 


yeah i know hot dogs aren't very healthy lol! i don't want to make the whole spread super dietetic. i just want to make sure there are healthIER options. and we usually just bring them in case other stuff runs out. we're usually at the park all day long. plus, there are kids coming and we never know if they're picky eaters or not. if nothing else, they'll usually eat a hot dog.

I made this "Greek Pasta Salad" for a picnic and loved it. I changed a few things too to make it a little healthier - I used whole wheat pasta and Fat free feta cheese...also the original "sauce" called for 6 TBS olive oil and 2 TBS vinegar, but I did 5/3 instead...you could probably do 4/4 and it would still be great.


Boil water and cook 12-16 oz pasta. Let cool and set aside


Chop:


-5-6 sun dried tomatoes in oil (drained)


-8 oz fat free feta (I used a brick, but you can get the feta already crumbled)


-3 or 4 fresh tomatoes


-3/4 or 1 cup freshly grated parm cheese


-1 cup fresh chopped parsley (I used a lot less and was still great)


Add the above to pasta and stir.


Dressing:


-5-6 sun dried tomatoes with a little oil


-1/2 tsp salt (more or less to taste)


-1/2 tsp pepper (more or less to taste)


- 1 clove garlic


-5 TBS olive oil


-3 TBS red wine vinegar


Blend the above in a mini chopper and pour over salad. Stir well. Yummy!!


Another ingredient I didn't add was pitted and chopped kalamata olives, b/c I hate them! But if you added them it would be even more "Greek" :)

our friend made an awesome tandori chicken for our recent bbq. the recipe is from "cooks illustrated" and i cannot post it here cuz i dont have a subscription/password...but try to look it up. it was amazing!
