New life to leftovers - Baked Turkey Croquettes
So I got snowed in yesterday from the storm and found an excellent opportunity to make these after reading SkinnyTaste.com. And they turned out pretty good! I think my only criticism is that I didn't add enough salt. I almost never make mashed potatoes or anything potatoes so I guess I didn't realize that I have to be generous with the salt.
ANyhoo, this would be super easy to make if you already have leftover mashed potatoes but I had to make them from scratched (we eat rice with our turkey during the holidays). I made two batched, one turkey heavy and another potato heavy. Both turned out great! and since they weren't too salty, I used some gravy as a dipping sauce. DH was very very happy! Give it a try!
** the dork in me realizes that the title should be "New Life for Leftovers." In my defense, I originally wrote "Bringing New Life to Leftovers" but shortened it to include the dish name.
