New life to leftovers - Turkey and Dumplings

For the first time in a long time, I didn't have to work right have the holidays!  So I asked my dad if I can take some turkey leftovers, including the carcass, to experiment on some recipes.  And what a success! 

First I made the the turkey stock by dumping the carcass in the stock pot along with some onions, celery, carrots and thyme.  Let that simmer for a few hours.  Strain it and set aside.  Then I followed the Pioneer Woman's Chicken and Dumpling recipe but skipped the browning part.  Start with sauting the onions, carrots, and celery in dutch oven.  Use the turkey stock and instead of the browned chicken pieces, I dumped in shredded turkey.  The best part of this recipe is the dumplings.  The cornmeal totally made the difference! 

I do receommend this recipe to anyone who has leftovers but needs something lighter after a glutonnous feast!  I would say my version is a healthier version since I skipped the the browning step so I bet the original recipe is delicious!


** the dork in me realizes that the title should be "New Life for Leftovers."  In my defense, I originally wrote "Bringing New Life to Leftovers" but shortened it to include the dish name.
