"Perfect Roast Chicken" + Vegetables
I don't consider myself a great cook.
I only seriously started cooking about six months ago; marriage kinda brought that I-want-to-cook-nice-meals-for-my-husband feeling out of me. Searching through Amazon for good beginner cookbooks brought me to Jamie Oliver's Food Revolution and I've been making a ton of his recipes. This book is GOLD.
Last night, I made "Perfect Roast Chicken" and "Roasted Vegetables."
The best part about cooking it was shoving a lemon (and thyme and rosemary) up the bird's hole. :D I just learned that if you microwave a lemon for a little bit, it is much easier to get all the juice to come out.
Here's what it looked like when I took it out an hour and 40 minutes later!
This came out SOOOO good! The skin was all thin and crisp and the actual meat was so juicy. I may never buy a rotisserie chicken from a megamart ever again. Officially, this is DH's favorite thing I've ever cooked for us.
Here are the roasted vegetables. I couldn't find any parsnips at Safeway, so I used some cauliflower I had instead. Next time, I'll cut the potatoes into slightly smaller pieces.
Unfortunately, not everything was a success. Here's my gravy of fail. :D
It might seem funny to cook an enormous bird for just two people, but the nice thing is now I've got a lot of chicken left over to use for other recipes this week!
