Depends on the season:


 


Fall/Winter for a large crowd: Turkey with mashed garlic cauliflower (instead of mashed potatoes) and steamed asparagus.  I make a pretty awesome turkey breast thanks to my father.




  • Remove skin from turkey breast

  • Cut 2 apples in half to act as stands for the turkey (I've found it's easier if you use bamboo skewers and skewer the apples so that everything stays put)

  • Season the turkey with a little salt/pepper/garlic and cover with bacon (create a new skin out of bacon)

  • pour 1 can of chicken broth/stock into the bottom of the pan

  • Create a tin foil tent over the turkey

  • Cook at 350 for 2-3 hrs



The bacon skin keeps the turkey super moist and you never have to open the oven to baste.


 


Spring/Summer: London broil on the grill with sweet potato fries and a salad or corn.  I use a rub on the london broil that's super yummy and easy to make.




  • 1 tablespoon garlic powder

  • 1 tablespoon kosher salt

  • 1 tablespoon ground black pepper

  • 1 tablespoon dried parsley

  • 1/4 teaspoon crushed red pepper

we use some of it with the gravy, feed whichever pieces are gross looking to the dog and crumble the rest to use with breakfast the next morning lol

I do a lasagna in a big pan and do half veggie and half meat. Always a big hit :)

Okay so first off, this is my first post here, so hi!  Secondly, this meal is not pre-wedding friendly, but it's easy, sooo delicious, and always a crowd pleaser!


Homemade Mac 'n Cheese:


Preheat oven to 350.


Prepare Elbow Macaroni (or whatever pasta you have on hand) Drain and spread in casserole dish.  Usually a full box fits well in a 9x13 dish.


In a saucepan, melt 2 tbsp. of butter.  Slowly add 1/2 pint container of heavy cream (told you it wasn't wedding dress friendly!) and blend together.


Depending on your love for cheese, slowly add between 1/2-1 pound of shredded cheddar cheese (or whatever cheese you'd like- jalepeno jack is a house fav here!) to the butter cream mixture, being sure to use a rubber spatula to scrape the bottom of the pan to prevent sticking.


Time saving tip: use a 1 pound bag of pre-shredded cheese instead of shredding it yourself.


After a couple of minutes your mixture should be gooey and cheesy- pour the whole thing over the pasta, and combine.  Add whatever esle you'd like in the casserole: bacon, lobster, tomatoes, get creative!


Top with Stove Top stuffing, dot with one tablespoon of butter, and pop in the oven for 25 minutes.  Voila, grown up Mac 'n Cheese.

I always make guacamole!  This "Turkey Roulade" has been quite a hit, and sometimes this "Angel Hair Pasta with Scallops".
