Slow cooker recipes?

What are your favorite slow-cooker recipes?

My parents gave us one for Christmas, and DH isn't happy, LOL. He's never tried using a slow cooker and doesn't know any recipes for it and thinks its just taking up space. I want to prove him wrong and make some awesome meals! Problem is, I've never used one either. Lol. Can you share some of your fav. recipes with me? TIA!

I have 2.

#1 is the easiest dish in the world. I make it quite often: 2-3 boneless/skinless chicken breasts, 1 jar of salsa, 1 can of black beans, 1 can of chicken broth. Set it to low when I leave for work and it's done when I get home. Sometimes I'll add a can of corn... sometimes serve it over brown rice... sometimes add some cheese or chopped avocado - whatever I feel like that day :)

#2, my favorite, is a ham & bean soup:

4 cans of Great Northern Beans
- 1-2 cans of water
- About 3/4 pound of thick ham (not thin deli-sliced ham), diced
- 1/2 of a red bell pepper, chopped
- 1/2 cup scallions, chopped
- 5 cloves garlic, minced or crushed
- Salt & pepper, to taste

Put all ingredients in crockpot and cook over low heat for 8 hours (4 hours on high heat). You can mash up some of the beans before putting them in the crockpot for a thicker broth (I usually put 1 or 2 cans in the blender before starting it)
Serve with cornbread

My mom made this when I was growing up. Now I always make it for football Saturdays in the fall and for winter bonfire parties.  My friends start requesting it every September :)

Umm.. I LOVE MY SLOW COOKER!

It's such a life saver!

My new favorite meal??

TURKEY BREAST!

Take aluminum foil and make a checkered base on the bottom of the pot.  This helps the turkey breast get browned on the bottom opposed to "soggy"...

Stick the turkey breast in, then season it (if it hasn't already been seasoned)

I had a 2.5 turkey breast and had it on low for 2 hours then high for 3 hours.

It was sooo moist and just fell apart... Absolutely delicious!

Another favorite that is super easy?

Taco soup!

cassandrajl: Don't let him get rid of the slow cooker yet! We never had one until we bought our apartment, and we've had one or two initial "failures" but if you read up on it and look up some recipes, you'll find they are very good for making tender meat dishes. We stuck a roast in ours the other week and when it was done you could literally tear the meat apart with a fork....sooo tender! I've heard from a few people that pulled pork is a must-try in the slow-cooker.

Now that our wedding stuff is over, I am hoping to dedicate more time to trying some slow cooker ideas - I'll be saving this thread to keep an eye on it and add to it if I find some good ones! :)

I absolutely LOVE my crock pot and have had it for quite some time now.. One of my favorite things to cook is a chicken dish that doesn't really have a name I just threw it together..

3-4 chicken breast (i pound mine out so they are a little thinner)

1 can rotel tomatoes

1/2 jar of picante saw

1/2 of the can of rotel of water

seasons to take

Put in crockpot for 4 hours on high or 8 hours on low

After the chicken is done it was pull apart into strips and easy to eat or we put it on tortillas with cheese or make chicken nachos. its really good and not to spicy!!

I LOVE mine, just too afraid to leave it on all day while we're at work (6:45am-4:30pm).

We love bbq pulled pork sandwiches ~ 2-3 boneless pork chops, 1 Cup bbq sauce (you pick the flavor!), and 1 medium onion.  Cook on high for 3.5 hours.  Once its cooked remove the pork, shred, then add back to the crockpot and stir.  Serve on a kaiser bun!

I also love a Moroccan stew - its this sweet spicy combo (contains yams and dates).  If you think you'd like it PM me and I'll send it to you!
