Mmmm I made some stuffed Peppers last night and had to take a picture - they were delicious! And I don't even like peppers that much! haha
1lb ground beef (I used ground turkey)
2 15oz cans tomato sauce
2 1/4 oz can sliced black olives, drained
4oz can mushrooms, drained
1 t. Italian Seasoning
1/2 t. garlic powder
1 t. fresh parsley, chopped
1 1/2 cups instant rice, uncooked
hot pepper sauce to taste
3 green peppers, halved and seeded
2 c. shredded mozzerella cheese
*Combine the first 9 ingredients together; spoon into peppers. Arrange peppers in a 13 x 9 baking pan; cover and bake at 375 until peppers are tender - about 40-45 minutes. Top with cheese; bake an additional 5 minutes or until cheese melts. Makes 6 servings.
*I was nervous to use uncooked rice - so I went ahead and cooked it first. And I didn't have any pepper sauce so i made them without! They were a hit with DH!
