Super Easy Chicken Enchiladas with White Sauce

Made these last night and was so quick and delicious!  It's my mom's recipe that I thought I'd share if you're interested:


Chicken Enchiladas w/ White Sauce


 


Ingredients:


4 skinless/boneless chicken breasts


Large flour tortillas


Monterey jack cheese


1 family-sized can of Cream of Chicken soup


1 medium-sized container of Sour Cream


1 can of diced green chilies


1 white onion


1 packet of Lawry's enchilada mix


 


Steps:


1.    Boil chicken breasts in pot with enchilada mix until cooked thoroughly


2.    Shred chicken into small pieces


3.    Dice onion into small pieces


4.    Heat sour cream, cream of chicken soup, onion and chilies in a soup pan on stove top to make the white sauce


5.    Spread sauce inside tortilla, then sprinkle in chicken and cheese


6.    Fold up tortilla and place in glass pan


7.    Repeat steps 5-6 until glass pan is filled with enchiladas


8.    Pour sauce on top of enchiladas in pan and sprinkle remaining chicken and cheese on top.


 


Cooking:


Place glass pan in oven for 25-30 minutes at 350 degrees (enough to melt cheese and warm tortillas).

I love this recipe. My spin on it is to use manicotti shells instead of tortillas. I love it!

sounds great ....but I have a Question .... it says boil chicken in pot with enchilada mix ... how much water?  ...and do you actually taste any of the seasoning after adding it to a pot of water?

Niecy, use enough water to cover the chicken and maybe an inch extra so it doesn't evaporate away. It usually takes me about 15-20 minutes of boiling depending on how thick your chicken breasts are. And you can taste the seasoning in the chicken.....it's light, but you can taste it.

I made this last night- I added Hot Sauce, Crushed Red Pepper Flakes, and Some Chili Powder to spice it up.  I also used 1 small can of Cream of Chicken soup and 1 can of Chicken broth instead of the large can of COC to make it a little lighter.  Kylie and Drew scarfed it down!  Next time I'm adding jalepenos to give it more of a kick, I like my food pretty spicy! :)
