Super Easy & Delicious Sweet & Sour Chicken
Cut boneless, skinless chicken breasts into 1-2" cubes. Toss in 1 egg white to coat. In a bowl, mix 3 Tbsp flour, 3 Tbsp cornstarch, 1/4 tsp each of salt and pepper.
Heat wok to medium-high and add EVOO. When oil is hot, toss chicken in flour/cornstarch mixture so all pieces are evenly coated. Add chicken pieces to wok and cook thoroughly. Meanwhile chop 1 onion, 1 green pepper and 1 red pepper into 2" square pieces. If you like pineapple, you can use that too.
Remove chicken from wok and drain on paper towel. Wipe excess oil and crumbs from wok. Turn heat to low and place chicken back in wok. Add veggies and VH1 Sweet and Sour sauce (I use the dipping sauce but you can use stir-fry sauce as well).
Stir to coat all pieces, and simmer for about 2 mins. Serve with rice and spring/egg rolls!
